1 bunch asparagus (cut into thirds)
3 cups spinach
1/2 cup radish (sliced)
1 cup cherry tomatoes (sliced in half)
1/2 cup peas
1/2 red onion (sliced)
1/4 cup feta cheese
1/4 cup olive oil
juice of one lemon
2 Tablespoons apple cider vinegar
salt and pepper

Steps:

  • In a large pot boil the asparagus for 3-5 minutes. Rinse in cold water.

1 head radicchio, julienned
1 bunch fresh spinach, cleaned and chopped
2 heads endive, julienned
1 bunch watercress
1 bunch arugula, cleaned and stems cut back
6 shallots, diced
24 spears pencil asparagus, blanched and refreshed
3 plum tomatoes, quartered
1/4 tablespoon olive oil
1 carrot, peeled and shaved into strips with peeler

Steps:

  • In a saucepan reduce balsamic vinegar until thick and malty. Place in a squirt bottle. In a large mixing bowl, place radicchio, spinach, endive, watercress and arugula. Toss until mixed well. Set aside.
  • In a small bowl, combine shallots, asparagus and the tomato. Add just a touch of balsamic reduction and the olive oil. Mix to coat the vegetables.
  • On a plate, place salad mix, then asparagus mixture, then carrot strips. Top with a light squirt of balsamic reduction and salt and pepper serve

2 medium yellow bell peppers, halved lengthwise
1/4 cup extra virgin olive oil, plus more for brushing
2 garlic cloves, minced
salt & freshly ground black pepper
1 1/2 lbs asparagus, trimmed and cut into 3-inch lengths
1 tablespoon balsamic vinegar

Steps:

  • Preheat the oven to 400°. Brush the pepper skins lightly with olive oil and set them, cut side down, on a baking sheet. Bake the peppers for about 15 minutes, or until the skins are blistered. Remove the skins and seeds and cut the peppers into long thin strips. In a bowl, combine the roasted peppers with the 1/4 cup of olive oil and the garlic and season with salt and pepper.
  • In a large pot of boiling salted water, cook the asparagus until just tender, about 4 minutes. Drain the asparagus; refresh under cold running water. Pat the asparagus dry with paper towels.
  • Preheat the oven to 450°. Spread half of the roasted peppers in a baking dish. Arrange the asparagus over the roasted peppers and season with salt and pepper. Top with the remaining roasted peppers and spoon the dressing on top. Bake for about 15 minutes, or until bubbling. Drizzle with the balsamic vinegar and serve warm.

  • In a small screw-top jar or plastic container with tight fitting lid, add olive oil, red wine vinegar, dijon mustard, garlic, salt, and pepper. Shake well to combine and set dressing mixture aside.

1 red bell pepper, cut in 1 x 1/4 nch strips
1 lb asparagus, trimmed of tough ends and cut on the diagonal into 1-inch pieces
1 medum shallot, sliced thin (about 1/4 cup)
1 tablespoon sherry wine vinegar
1 teaspoon sherry wine vinegar
1 medium garlic clove, minced
1 (6 ounce) bag Baby Spinach
4 ounces goat cheese, cut into small chunks
salt & fresh ground pepper

  • Heat 2 tablespoons oil in 12-inch nonstick skillet over high heat until beginning to smoke; add red pepper and cook until lightly browned, about 2 minutes, stirring only once after 1 minute. 1 lb fresh asparagus, trimmed & cut into bite size pieces
1 yellow pepper, diced
1 pint grape tomatoes, cut in half
3 green onions, chopped
2 tablespoons fresh parsley
3 tablespoons olive oil
2 tablespoons red wine vinegar
1 minced garlic clove
1/2 teaspoon Dijon mustard
1 dash salt & pepper
3 tablespoons sunflower seeds

Steps:

  • Put the asparagus pieces in a small strainer- then put that into a larger bowl with 1 inch of water on the bottom- microwave for 3 minutes. Immediately rinse in cold water.

1 pound new red potatoes
1 pound asparagus
1/2 large red bell pepper, seeded
1/2 cup slivered red onion
The Dressing
5 tablespoons Creole mustard (preferably Zatarain's) or spicy brown mustard
6 tablespoons balsamic vinegar
1 1/2 tablespoons brown sugar
3/4 teaspoon kosher salt
1/4 teaspoon black pepper
1 clove garlic, pressed or finely minced
6 tablespoons olive oil
Tabasco sauce

Steps:

  • Scrub the potatoes and cook in boiling salted water to cover til tender. Without peeling, cut the potatoes into 3/4-inch cubes and put them into a bowl. Snap off the tough bottoms of the stalks of asparagus and discard, then cook the tender tops in a shallow pan of simmering salted water til tender-crisp. Drain and shock in cold water. Slice the asparagus into 1 1/2-inch pieces and add to the potatoes. Cut the pepper into sticks about the same width and length as the asparagus. Put in the bowl. Add the red onion.
  • Mix up some dressing by stirring together the mustard, vinegar, brown sugar, salt, pepper, and garlic in a small bowl. Drizzle in the oil, whisking constantly to make a creamy dressing. Add a couple of dashes of Tabasco to boost the flavor to your liking.
  • Splash the dressing onto the vegetables and give the salad a good stir. Serve right away for best color in the asparagus.
