ASPARAGUS PEA CASSEROLE
My mother gave me this recipe a few years back. I love asparagus, unlike my husband. If I don't tell my husband that it has asparagus in it, he actually eats it and likes it.

Steps:
- 1. Place vegetables in buttered dish.
- 2. Add soup.
- 3. Sprinkle the buttered cracker crumbs on top.
- 4. Sprinkle grated cheese on top.
- 5. Bake in a 350 degree oven for 30 minutes.
Tips:
- Choose fresh, tender asparagus and peas. Look for asparagus spears that are bright green and have tight tips. Avoid any spears that are wilted or have brown spots. Peas should be bright green and plump.
- Trim the asparagus. Cut off the tough ends of the asparagus spears, about 1 inch from the bottom. Then, cut the spears into 1-inch pieces.
- Blanch the asparagus and peas. This will help to preserve their color and crispness. To blanch the vegetables, bring a large pot of salted water to a boil. Add the asparagus and peas and cook for 2-3 minutes, or until they are bright green and tender. Drain the vegetables and immediately transfer them to a bowl of ice water to stop the cooking process.
- Make the cheese sauce. In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute, or until the mixture is smooth and bubbly. Slowly whisk in the milk, stirring constantly. Bring the mixture to a simmer and cook for 5 minutes, or until it has thickened. Stir in the Cheddar cheese and Parmesan cheese until melted and smooth.
- Combine the vegetables and cheese sauce. In a large bowl, combine the blanched asparagus, peas, onion, and cheese sauce. Stir until combined.
- Transfer the mixture to a casserole dish. Pour the asparagus and pea mixture into a 9x13 inch casserole dish.
- Top with breadcrumbs and bake. In a small bowl, combine the breadcrumbs, melted butter, and parsley. Sprinkle the breadcrumb mixture over the top of the casserole. Bake the casserole in a preheated oven at 350 degrees Fahrenheit for 20-25 minutes, or until the casserole is bubbly and the breadcrumbs are golden brown.
Conclusion:
Asparagus and pea casserole is a delicious and easy-to-make side dish that is perfect for any occasion. It is a great way to use up fresh asparagus and peas, and it is also a good source of vitamins and minerals. This casserole is sure to be a hit with your family and friends.
