2 cup glutinous rice (soaked 24 hours in refrigerator)
1/2 cup unsweetened coconut flakes
1 cup coconut milk
Salt and black pepper, to taste
Sugar, to taste
1/3 cup each: pineapple, mango, and papaya, medium dice
1 tablespoon jalapeno, finely chopped
2 limes, juiced
1/4 cup red onion, finely chopped
Salt and black pepper, to taste
1/4 cup shallots, sliced
2 tablespoons garlic, finely chopped
2 tablespoons butter
1/2 cup ponzu
2 tablespoons Mirin
2 cups dashi, recipe follows
Salt and black pepper, to taste
1 tablespoon miso
2 dozen medium asparagus, tough ends removed
Garlic oil, reserved from garlic chips
Salt and black pepper, to taste
4 garlic cloves, thinly sliced
1 cup canola oil
1 piece kelp (1 by 1/2 inch)
2 cups bonito flakes
3 1/2 cups water

Steps:

  • Lay the 4 pieces of halibut on a clean work surface. Season each piece with the salt, pepper, and cayenne. Using a brush, quickly spread a thin layer of the egg whites on top of the fish and then sprinkle over the chopped macadamia nuts. Press the nuts into the fish to secure. Preheat the oven to 400 degrees F. Heat a large saute pan coated with the oil to medium heat. Place 2 pieces (or 4 if the pan is big enough) of the fish, macadamia side-down, in the pan and sear for 3 to 4 minutes, until the macadamias are golden brown. Flip the fish and cook for another 3 minutes. Repeat the process with the 2 remaining pieces of fish. Place all 4 pieces of fish in a baking dish and cook in the oven for another 8 to 10 minutes.
  • Form the Rice into a small flat disk in the center of the plate. Spoon some of the Salsa on top of the rice. Lean the fish against the rice and drizzle the sauce around the plate. Place the Asparagus against the fish and garnish with the Garlic Chips.
  • In a large bowl filled with water, soak the rice for 24 hours in the refrigerator. Fit a colander or steamer lined with leaves (lotus, banana, Napa) inside of a large stockpot filled with water and add the rice to the colander. Make sure that the water is not touching the colander. Steam the rice for about 25 to 30 minutes. When the rice is soft, remove it from the colander and place it into a large mixing bowl. Add the coconut flakes and milk to the rice and season with the salt, pepper, and sugar. Set aside.
  • In a medium mixing bowl, add the pineapple, mango, papaya, jalapeno, lime juice, and red onion. Toss gently and season with salt and pepper.
  • Prepare a saute pan over medium heat. Sweat the shallots, garlic, and 1 tablespoon of the butter, about 4 to 5 minutes. Add the ponzu, mirin, dashi, salt, and pepper and allow to boil. Remove from heat and pour in a blender. Add the miso, blend and add the remaining tablespoon of butter.
  • Preheat the oven to 350 degrees F. In an oven proof saute pan, combine the asparagus, garlic oil, salt and pepper and roast in the oven for about 5 minutes, until the asparagus are tender.
  • Prepare a saucepan over high heat and add the oil and the garlic. When the garlic becomes golden brown, remove from the heat. Strain the garlic and reserve both the garlic and the oil.
  • Wipe the kelp with a damp towel and then place it into a medium sized pot filled with water. Heat the water just before boiling, remove the pot from the heat, and remove the kelp. Place the bonito flakes in the water and allow them to settle to the bottom of the pot. Strain out the bonito flakes.

2 tablespoons butter
4 (8-ounce) ostrich steaks
Cooked spinach, for serving
Blanched asparagus, for serving

  • In a saucepan, bring several inches of water and the lemon juice to a simmer. Peel salsify and add to acidulated water; simmer until very tender. Strain and then transfer salsify to the bowl of a food processor. Add cream and melted butter and puree until smooth. The consistency should be more like a sauce than a puree. Keep warm.

When pan is hot, add ostrich and sear on both sides until cooked to a medium doneness; it will not take long, as ostrich cooks very quickly and is not good when over-cooked. Reserve and keep warm. It may be necessary to sear the ostrich in 2 batches, so as not to over-crowd the pan.

Slice the ostrich on a sharp bias and place it next to the potato stack. Garnish with sweetbreads, asparagus, and enoki mushrooms. Drizzle Medoc reduction around the plate.

OVEN-ROASTED SALMON, QUINOA AND ASPARAGUS WITH WASABI OIL

Oven-Roasted Salmon, Quinoa and Asparagus With Wasabi Oil image

Seasoned oils like the wasabi oil I buy at my local specialty grocery can embellish a simply cooked piece of fish, a bowl of grains or steamed vegetables. Here the salmon is cooked in the oven, and the wasabi seasoned oil (mine is canola oil-based) is drizzled on just before serving. It's served with quinoa, which you can also dress with the oil, and vegetables in season.

Time 40m

Yield 4 servings

Number Of Ingredients 5

1 1/2 pounds salmon fillets
Coarse sea salt and freshly ground pepper to taste
3 cups cooked quinoa
1 pound asparagus or any other green vegetable
4 teaspoons wasabi oil (available at gourmet markets) (more to taste)

Steps:

  • Place the salmon in the oven and bake until the fish flakes and white bubbles of protein appear on the surface, 10 to 20 minutes, depending on the size of the fillets. Remove from the heat.
  • Meanwhile, snap off the woody ends of the asparagus and steam for 5 minutes, until tender. Remove from the heat.
  • Place a serving of quinoa on each plate, or place a mound of it on a platter. Top with the salmon fillets and arrange the asparagus on the side. Drizzle about a teaspoon wasabi oil over the fish and the asparagus, and serve.

SARASOTA'S FOIL POUCH OVEN ROASTED ASPARAGUS

Sarasota's Foil Pouch Oven Roasted Asparagus image

No clean up, 20 minutes, easy and healthy. Nothing more to say. This also will work with green beans, brussels sprouts, zucchini and summer squash, and mushrooms. I just change the seasoning a little (thyme with squash; rosemary with mushrooms and brussels sprouts) and otherwise, a great easy way to make a roasted flavor with no clean up. You may not get that dark caramelized color, but ... for a quick easy vegetable side dish, I love it.

Provided by SarasotaCook

Categories     Vegetable

Time 25m

Yield 4 , 4 serving(s)

Number Of Ingredients 6

1 lb asparagus (cut the bottom 1-1 1/2-inch off, the tough woody stems)
1 tablespoon olive oil
1/2 teaspoon lemon juice (the juice from one of those little plastic lemons will work ok for this if you do not have a fresh l)
2 slices lemons (optional)
salt
pepper

Steps:

  • Foil Pouch -- About 24-30" long piece of foil.
  • Asparagus -- I base this on thick asparagus. Sometimes during the year you can buy the pencil thin asparagus, so make sure that you cut down the cooking time down and the amount of oil and seasoning as this cooks much faster and to me doesn't need as much seasoning or oil.
  • I place all the asparagus in the center of the foil pouch and spread the spears out slightly, alternating the tip and stem end so they all cook evenly. Drizzle on the olive oil, salt, pepper, lemon juice and a couple of slices of lemon if you have them.
  • Bake -- Fold up the pouch making sure the majority of the asparagus sits flat and seal tightly. I pick it up and shake it a couple of times which really just distributes all the oil and seasoning throughout the pouch.
  • Bake in a 400 degree oven for 20-25 minutes on the middle shelf.

Make and share this Oven Roasted Asparagus recipe from Food.com.

Provided by Lvs2Cook

Categories     Vegetable

Time 20m

Yield 8-10 serving(s)

Number Of Ingredients 6

3 lbs fresh asparagus
2 tablespoons olive oil
3 garlic cloves, minced
3/4 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 cup slivered almonds, toasted

Steps:

  • Snap off and discard tough ends of asparagus.
  • Place asparagus on a lightly greased baking sheet.
  • Drizzle with oil and sprinkle with garlic, salt, and pepper.
  • Bake at 350º for 10 minutes or until your desired degree of tenderness.
  • Transfer to a serving dish and sprinkle with almonds.

Tips:

  • Choose thick asparagus spears. Thicker spears will roast better and won't become limp.
  • Trim the asparagus spears. Cut off the tough, woody ends of the spears.
  • Toss the asparagus spears with olive oil, salt, and pepper. This will help them roast evenly and develop flavor.
  • Spread the asparagus spears in a single layer on a baking sheet. Don't overcrowd the spears, or they won't roast properly.
  • Roast the asparagus spears at a high temperature. This will help them caramelize and develop a nice roasted flavor.
  • Roast the asparagus spears until they are tender-crisp. You should be able to easily pierce them with a fork, but they should still have a slight bite to them.
  • Serve the roasted asparagus spears immediately. They are best enjoyed hot and fresh out of the oven.

Conclusion:

Roasted asparagus is a delicious and easy side dish that can be enjoyed with a variety of meals. It is a great way to get your daily dose of vegetables, and it is also a good source of vitamins and minerals. With just a few simple ingredients and a few minutes of your time, you can have a delicious and healthy side dish that the whole family will love.
