1 bunch asparagus (snapped and rinsed (see tips in post))
1 pint sliced button mushrooms
1 lb salmon fillet
2 tbsp olive oil
kosher salt and pepper
4 tbsp butter
2 tbsp soy sauce
2 tsp balsamic vinegar

Steps:

  • Preheat oven to 400 degrees.
  • On a large sheet pan, toss asparagus and mushrooms in 1 tbsp olive oil, and salt and pepper to taste. Arrange in a single layer.
  • Place salmon fillets skin-side down on top of vegetables. Brush with remaining olive oil and sprinkle with salt and pepper.
  • Bake for 15 minutes.
  • About 5 minutes before baking is finished, melt butter in a tiny saucepan over medium or medium-high heat. It will foam up - stir it constantly for a couple minutes until the foam subsides and the butter starts to take on a rich brown color.
  • When the butter is brown (careful not to burn it!) remove it from the heat and stir in the soy sauce and vinegar.
  • Remove the pan from the oven, and peel off salmon skin. Drizzle sauce over everything on the sheet pan.
  • Enjoy. Drink the sauce when you're done.

This salmon and asparagus pasta is simple to make, and you will love the lemony garlic cream sauce. Ready in about 30 minutes!

8 ounces uncooked pasta
1 bunch asparagus (ends trimmed)
1 pound fresh salmon
Salt & pepper (to taste)
1/4 teaspoon Italian seasoning
1 tablespoon olive oil
1 tablespoon butter
3 cloves garlic (minced)
1 tablespoon lemon juice + zest from 1/2 lemon
1/2 cup freshly grated parmesan cheese
3/4 cup heavy/whipping cream

Steps:

  • Boil a salted pot of water for your pasta. Cook it al dente according to package directions.
  • Meanwhile, trim your asparagus (I cut about 1.5" of the ends off while the asparagus is still tied up in a bunch to make it easy). Cut it into smaller pieces. Prep your other ingredients and sprinkle the salmon with salt & pepper and the Italian seasoning.
  • Add the butter and oil to a skillet over medium-high heat. Cook the salmon for 3 minutes/side and then take it out of the pan and set it aside.
  • Add the asparagus to the skillet and cook for 2-3 minutes (3 minutes if it's on the thicker side or you like it softer).
  • Stir in the garlic and cook for 30 seconds.
  • Add the lemon juice + zest, cream, and parmesan to the pan. Give it a good stir then add the salmon back. Break it up into smaller pieces with your spoon. Cook the sauce for another few minutes until the salmon is fully cooked through, the asparagus is tender, and the sauce has reduced a bit. The sauce is not meant to be very thick in this recipe. Toss the sauce with the drained pasta and serve immediately.

2 slice bacon
1/2 c onion, chopped
1 lb asparagus, sliced into 1" pieces
1 c chicken broth
6 oz baby spinach
1/2 c mushrooms, sliced
1/4 c white wine
1/2 can(s) reserved pasta water
1/2 c shredded parmesan, divided
1/2 tsp black pepper

Steps:

  • 1. Cook pasta according to package directions. Drain, reserving 1/2 cup of cooking water.
  • 2. Cook bacon until crisp and crumble. Add onion and mushrooms to bacon drippings and saute one minute. Add asparagus wine and broth and simmer five minutes, until asparagus is crisp-tender. Add pasta, spinach, 1/4 cup cheese and pepper. Toss and sprinkle with remaining cheese and bacon.

¼ cup chopped fresh Italian flat-leaf parsley
½ medium white onion, chopped
2 medium lemons, juiced, divided

1 ½ cups milk
1 tablespoon salted butter
1 (1.6 oz) package Sauce, CPC, KNORR Alfredo Sauce, dry mix

  • Combine wine, olive oil, parsley, onion, and juice of 1 lemon in a large skillet over medium heat until simmering. Place salmon on top, with scales down. Cover and poach until fish flakes easily with a fork, about 20 minutes.

Proscuitto or ham may be substituted for the bacon, but you'll probably need to add a tablespoon of butter to saute the onion and mushrooms.
