If you like your green beans a little more tender you need to put them in the pan first to give them a little more cooking time. I make this when I have the ingredients fresh in the garden and the flavors are so bright and simple.You can add baby carrots too if you have them.

2 cups fresh asparagus, cut into 1-inch sections
2 cups fresh green beans, snapped into 1-inch secions
2 tablespoons minced garlic
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1/4 cup baby carrots, strips (optional)
3 tablespoons olive oil
1 teaspoon balsamic vinegar (optional)

Steps:

  • Heat a heavy bottom saute` pan to medium high. Add olive oil and swirl to coat pan. Add asparagus, green beans (and carrots if using) and stir well to coat vegetables with oil. Sprinkle in salt and pepper and add garlic. Stir constantly 1-2 minutes until garlic is lightly browned. Pour onto serving platter and add a splash of Balsamic vinegar to finish if desired. 1 (10.75 ounce) can condensed cream of mushroom soup
1 (6 ounce) can French fried onions
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place green beans and soup in a large microwave-safe bowl. Mix well and heat in the microwave on HIGH until warm (3 to 5 minutes). Two bunches fresh asparagus
4 tablespoons butter
4 tablespoons all-purpose flour
1 cup milk
Pinch salt
5 ounces Cheddar, grated
4 hard-boiled eggs
1/2 cup saltine cracker crumbs (about 10 crackers)

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the asparagus to a large pot of boiling water, keeping the bundles together with rubber bands or string. Cook for a couple of minutes; the asparagus should be bright green and still crunchy. List the bundles out of the water and slice off the tough ends of the asparagus. Drop the trimmed ends back in the boiling water and lower to a simmer.
  • Run the asparagus tops under cold water to stop the cooking.
  • Melt the butter in a medium saucepan. Whisk in the flour to make a roux. Cook for 1 minute, then whisk in the milk and 1 cup of the asparagus cooking liquid. Add the salt and continue cooking until the sauce thickens, about 5 minutes. Add the grated Cheddar and cook, stirring, until melted, about 1 minute.
  • Arrange the asparagus in the bottom of a 9-by-12-by-2-inch baking dish, alternating the stem ends so each serving includes both heads and stems. 4-5 slice bacon cooked and drained
1 15 oz can white asparagus
1 16 oz can whole green beans
2 hard boiled eggs cooked and chopped
1 can cream of mushroom soup
1/2 tsp garlic salt
1/4 c seasoned bread crmbs
1 small onion halved and sliced thin
1 small jar sliced pimientos
3/4 c shredded chedder cheese
salt and pepper to taste
1/2 c water

Steps:

  • 1. fry bacon until crisp, drain and crumble. boil 2 eggs and chop into small pieces.
  • 2. in the bacon drippings, saute onion until tender.
  • 3. drain the asparagus, green beans and the pimientoes.butter a 9x13" glass baking dish, lightly buttered.
  • 4. layer the asparagus , then the greenbeans . now put the onions and sliced pimientoes over the green beans.
  • 5. sprinkle with crumbled bacon and chopped eggs.
  • 6. mix the mushroom soup, water , cheese ,garlic salt and pepper. pour evenly over the top of casserole and spinkle with seasoned bread crumbs.
  • 7. bake in 325 oven for 30 minutes.
