3 tablespoons extra-virgin olive oil
Kosher salt and black pepper
1 bunch asparagus (about 1 pound), ends snapped or trimmed

Steps:

  • Place a paper towel-lined plate next to the stove. In a medium or large skillet, combine the garlic and olive oil over medium-low heat. Cook, shaking the skillet often, until the garlic is very light golden, 3 to 5 minutes. 1 cup green peas ((frozen or fresh))
1 tablespoon extra virgin olive oil
1 small red onion (, finely diced)
4 garlic cloves (, minced)
1 tablespoon all-purpose whole wheat white flour
1/4 cup low sodium chicken broth
1 cup skim milk
2 ounces room temperature cream cheese
3 tablespoons grated parmesan cheese
salt and fresh ground pepper (, to taste)
Fresh chopped parsley (, for garnish)

Steps:
