CURRY CHICKEN WITH ASPARAGUS

Curry Chicken with Asparagus image

I love the flavors that a good curry brings. It is a good dish to make when you have a little bit of this and a little bit of that to make a complete meal and have enough to bring to lunch the next day.

Provided by Kathy Williams

Categories     Chicken

Time 30m

Number Of Ingredients 11

6 boneless chicken thighs cut into bite size
5 slice bacon
1 medium onion
1 bell pepper chopped
1/2 lb asparagus cut into 1"pieces
2 Tbsp tomato paste
2 tsp garlic, minced
2-3 Tbsp curry powder
1 tsp ginger powder
1 c chicken broth
1 can(s) coconut milk

Steps:

  • 1. In a heavy pan or skillet cook bacon to render fat. Add chicken pieces, salt, pepper and brown on all sides. Remove and set aside.
  • 2. In the same pan, add onion, bell pepper, and asparagus, and cook until softened. Moving the vegetables aside add tomatoe paste and garlic and cook for 1-2 minutes, stir in the curry powder and ginger and cook a minute more. Add chicken and stir all together.
  • 3. Stir in chicken broth and lower heat, cover and simmer for about 5 minutes or until chicken is done. Stir in coconut milk and simmer a few minutes more. Serve over Jasmine rice. I like to put the curry sauce on the bottom then the rice and top with meat and vegetables and then more sauce.

Tips:

  • Choose the right asparagus. Look for spears that are bright green and have tightly closed tips. Avoid spears that are limp or have brown spots.
  • Trim the asparagus. Using a sharp knife, cut off the woody ends of the asparagus spears. You can also peel the asparagus if desired, but this is not necessary.
  • Cook the asparagus. Asparagus can be cooked in a variety of ways, including boiling, steaming, roasting, and grilling. The cooking time will vary depending on the method you use.
  • Make the curry sauce. While the asparagus is cooking, you can make the curry sauce. There are many different recipes for curry sauce, but they typically include a combination of spices, such as cumin, coriander, and turmeric, as well as coconut milk and vegetables.
  • Combine the asparagus and curry sauce. Once the asparagus is cooked and the curry sauce is ready, combine them in a bowl or serving dish. You can serve the curry immediately or let it cool and then refrigerate it for later.

Conclusion:

Asparagus curry is a delicious and healthy dish that is perfect for a quick and easy meal. It is also a great way to use up leftover asparagus. With its vibrant color and delicate flavor, asparagus curry is sure to be a hit at your next gathering. So next time you're looking for a new and exciting way to enjoy asparagus, give this recipe a try. You won't be disappointed!
