BACON AND EGG SALAD
Steps:
- Cook the bacon pieces in a large skillet over medium-high heat until crisp; transfer to a paper towel-lined plate to drain. Add the shallots to the pan and cook until softened, 2 to 3 minutes. Pour in 2 tablespoons vinegar, reduce the heat and simmer gently for 1 minute.
- In a large skillet, bring about 6 cups of water and 1 tablespoon of vinegar to gentle simmer. Crack the eggs, 1 at a time, and gently slip them it into the water. Cook until white is set but yolk is still runny, about 1 1/2 to 2 minutes.
- Add the frisee and crisp bacon pieces to the warm pan dressing, season with salt and pepper, to taste, and toss to coat. Divide the dressed frisee and bacon between 4 plates; top with a poached egg and season with salt and pepper, to taste. Serve immediately.

Steps:
- Preheat the oven to 375 degrees F.
- To cook the bacon using the "Mauro Method," line a baking sheet with parchment, overlapping each side 1 to 2 inches. Put the bacon on the parchment and bake until crisp and brown, about 20 minutes. This way, the fat will fry the bacon to a perfect crisp but not come in contact with the metal pan, creating a mess. Drain the bacon on paper towels and let cool. (Once the fat is cooled, use or just toss it. No mess!)
- Crumble the bacon into a bowl. Gently mix in the eggs, mayonnaise, chives, mustard and lemon juice. Season with salt and pepper.
- Eat alone, or build sandwiches with avocados and tomatoes on toasted croissants.

Steps:
- Heat grill to High and cook the bacon for 5 mins until crisp, then snip with scissors into pieces. Set aside. Cook the eggs in boiling water for 8 mins (5 mins for hen's eggs), drain and plunge into ice water, to cool as quickly as possible.
- Make the dressing: whisk all ingredients together with seasoning. Prepare the asparagus by snapping off the base of each spear - it'll break at the tender point.
- Just before serving, put the nuts and bacon into a warm oven. Halve the eggs and season. Bring a pan of salted water to the boil; cook the asparagus for about 5 mins, until just tender. Drain, then divide between plates. Add egg halves, sprinkle with nuts and bacon, then drizzle with dressing in a zigzag pattern.

ASPARAGUS SALAD WITH HARD-BOILED EGGS
A classic Italian salad, there are many versions of this dish. Sometimes the asparagus are not cut up, just topped with chopped hard-boiled eggs and vinaigrette. I like to cut them into pieces and toss everything together.

Tips:
- Choose fresh, tender asparagus. Look for spears that are bright green and have tightly closed tips. Avoid spears that are wilted or have brown or yellow spots.
- Cook the asparagus properly. Asparagus can be cooked in a variety of ways, but the most popular methods are steaming, roasting, and grilling. No matter which method you choose, be sure to cook the asparagus until it is tender but still has a slight crunch.
- Use high-quality bacon. The bacon you use in this salad will make a big difference in the flavor, so be sure to choose a good-quality bacon that you enjoy. Thick-cut bacon is a great option for this salad because it adds a nice smoky flavor and texture.
- Hard-boil the eggs perfectly. Hard-boiled eggs are a key ingredient in this salad, so it's important to cook them perfectly. To hard-boil eggs, place them in a single layer in a saucepan and cover them with cold water. Bring the water to a boil, then reduce the heat to low and simmer for 10-12 minutes. Remove the eggs from the heat and place them in a bowl of ice water to stop the cooking process.
- Use a good-quality mayonnaise. Mayonnaise is another key ingredient in this salad, so be sure to use a good-quality mayonnaise that you enjoy. You can also make your own mayonnaise at home if you prefer.
- Add some fresh herbs. Fresh herbs can add a nice pop of flavor to this salad. Some good options include chives, dill, parsley, and tarragon.
Conclusion:
This asparagus, bacon, and egg salad is a delicious and easy-to-make dish that is perfect for a light lunch or dinner. The salad is packed with flavor and nutrients, and it is sure to please everyone at the table.
