ASPARAGUS, SUNDRIED TOMATO, AND ORZO SALAD

Asparagus, Sundried Tomato, and Orzo Salad image

A yummy and simple way to use fresh asparagus. I was inspired to write this recipe after watching my almost-4-year-old picky eater gobble up a mixture of orzo and sundried tomatos at Trader Joe's. The asparagus can easily be changed to another vegetable; I have successfully used brussels sprouts with a very pleasing result.

Tips:

  • Choose fresh, tender asparagus: Look for asparagus spears that are bright green and have tight, closed tips. Avoid spears that are wilted or have brown spots.
  • Cook the asparagus properly: Asparagus can be cooked in a variety of ways, including boiling, steaming, roasting, and grilling. The best way to cook asparagus is to use a method that will preserve its鮮嫩度. Boiling or steaming asparagus for a short time is a good way to achieve this.
  • Use high-quality sun-dried tomatoes: Sun-dried tomatoes come in a variety of qualities. Choose sun-dried tomatoes that are plump, moist, and have a deep red color. Avoid sun-dried tomatoes that are dry, shriveled, or have a dull color.
  • Make the dressing ahead of time: The dressing for this salad can be made ahead of time and stored in the refrigerator for up to 2 days. This makes it a great option for a quick and easy meal.
  • Serve the salad immediately: This salad is best served immediately after it is made. The asparagus will start to lose its鮮嫩度 if it sits for too long.

Conclusion:

Asparagus and sun-dried tomato salad is a delicious and healthy dish that is perfect for a light lunch or dinner. It is also a great way to use up leftover asparagus. The combination of asparagus, sun-dried tomatoes, and a tangy dressing is sure to please everyone at your table.
