10 ounces frozen spinach, thawed and drained
1/4 teaspoon ground black pepper
10 large eggs
1 1/2 cups milk
1 tablespoon salt-packed capers, rinsed and chopped
1/4 cup chopped Italian parsley
2 scallions, finely chopped
1 tablespoon red-wine vinegar

Steps:

  • Preheat oven to 375 degrees with rack in middle position.
  • Heat a 10-inch cast iron skillet over medium-high heat. Add 1 tablespoon oil to skillet.
