CHEESE RAVIOLI WITH ALFREDO AND ASPARAGUS.

Cheese Ravioli with Alfredo and Asparagus. image

i enjoyed a delicious dinner at an awesome italian restaurant in Western NY. Ilio Dipaolos. It was a pasta dish sampling = which included Fettucine Alfredo and then Ravioli with a marinara sauce. Along with a a filet mignon. It was over the top delicious! So I made this dish, minus the filet mignon. I sure hope you enjoy it...

Time 1h50m

Number Of Ingredients 11

1 pkg frozen cheese ravioli
1 c heavy cream
2 clove minced garlic.
1/4 c minced onion
1/8 c chopped parsley
1/2 bunch asparagus
1 c parmesan cheese
1 bottle marina sauce ( i love barilla)
1/4 c butter
1 dash(es) salt and pepper
1 can(s) vegetable or chicken broth

Steps:

  • 1. First in a saucepan, I melted the butter. I added the minced garlic, onions and parsley. I pulsed them in my mini food processor till they were finely minced.
  • 2. In another pan, I added about half a cup of water, and half a cup of broth. I added my asparagus which I chopped into three inch pieces and I sauteed until they were tender. Which was about 25 minutes or so.
  • 3. Once the onions became transparent, I added the heavy cream, and I blended it into the butter mixture. Once that was blended in, I added the parmesan cheese into this mixture, and blended it well. I added salt and pepper to taste. Finally add the asparagus. I drain any excess water you might have in the asparagus sauce pan before adding the asparagus to the Alfredo.
  • 4. Boil the cheese ravioli according to directions.
  • 5. In another saucepan, heat the Marina.
  • 6. Finally, on each plate, add a serving of the cheese ravioli, and on one side of the ravioli, ladle some of the Alfredo sauce and the Marinara on the other. You get the best of both worlds!!

SPRING VEGETABLE FETTUCCINE ALFREDO

Spring Vegetable Fettuccine Alfredo image

Spring vegetables brighten up classic pasta Alfredo, while lemon zest and chives cut the rich creaminess.

Provided by Food Network Kitchen

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 12

Kosher salt
One 9-ounce package fresh fettuccine
Extra-virgin olive oil, for tossing
2 cups shiitake mushrooms (about 4 ounces), stems removed and discarded
1 bunch thin asparagus, about 1 pound
1 stick (8 tablespoons) unsalted butter
1/2 cup frozen peas
Freshly ground black pepper
2 cups heavy cream
1 1/2 cups freshly grated Parmigiano-Reggiano cheese
1 tablespoon chopped chives
Finely grated zest of 1/2 lemon

Steps:

  • Bring a large pot of generously salted water to a boil. Add the pasta and cook according to package directions until al dente, tender but slightly firm. Reserve 1/2 cup of the pasta water, then strain the pasta and toss with a splash of oil in the colander.
  • Meanwhile, slice the mushroom caps into 1/4-inch-thick strips. Snap the woody ends off the asparagus and cut into 2-inch lengths. Heat a large skillet over medium heat, and add 2 tablespoons of the butter. When the butter melts, raise the heat to medium-high and add the mushrooms in 1 layer. Cook, without moving, until the undersides have browned, 1 to 2 minutes, then stir and cook until golden about 2 minutes more. Add the asparagus, another tablespoon of butter, and 1/2 teaspoon salt and continue to cook, stirring occasionally until the asparagus is tender and the mushrooms are browned, 2 to 4 minutes. Transfer the vegetables to the colander with the pasta.
  • Reduce the heat to medium and add the remaining 5 tablespoons butter. When the butter has mostly melted, whisk in the cream and bring to a simmer, then add the peas and cook for 2 minutes. Turn off the heat.
  • Whisk the Parmigiano-Reggiano into the sauce. Add the vegetables, cooked pasta, chives and lemon zest and toss well. Season with salt and pepper. The pasta will thicken as it cools. To thin it, add reserved pasta water 1 tablespoon at a time and toss to reach the desired consistency. Serve hot in heated bowls.

ASPARAGUS RAVIOLI IN PARMESAN SAUCE

Asparagus Ravioli in Parmesan Sauce image

Provided by Lawrence Karol

Categories     Pasta Maker     Pasta     Dinner     Lunch     Parmesan     Asparagus     Spring     Birthday     Family Reunion     Potluck     Gourmet     Peanut Free     Tree Nut Free     Soy Free

Yield Makes 6 (first course) servings

Number Of Ingredients 10

Pasta dough
1 pound asparagus, trimmed
5 cups rich chicken stock
1 (3-inch) rind from a wedge of Parmigiano-Reggiano
1 Turkish or 1/2 California bay leaf
1/4 cup grated Parmigiano-Reggiano
1/4 cup mascarpone
1/4 cup fine dry bread crumbs
1 teaspoon grated lemon zest
Equipment: a pasta machine

Steps:

  • Make broth and filling while dough stands:
  • Cut off asparagus tips, then halve each tip lengthwise and reserve.
  • Bring stock, cheese rind, and bay leaf to a simmer in a medium saucepan, then add asparagus stems and cook, uncovered, until stems are just tender, 5 to 6 minutes. Transfer stems to paper towels and cool slightly. Reserve broth.
  • Purée asparagus stems in a food processor with grated parmesan, mascarpone, bread crumbs, zest, and 1/2 teaspoon each of salt and pepper.
  • Make Ravioli:
  • Cut dough into 4 equal pieces. Cover 3 pieces with plastic wrap, then pat out remaining piece into a flat rectangle and generously dust with flour.
  • Set rollers of pasta machine on widest setting. Feed rectangle, a short side first, through rollers. Fold rectangle in thirds, like a letter, and feed it, a short side first, through rollers. Repeat 6 or 7 more times, folding dough in thirds and feeding it through rollers, a short side first each time, dusting with flour to prevent sticking.
  • Turn dial to next (narrower) setting and feed dough through rollers without folding, a short side first. Continue to feed dough through without folding, making space between rollers narrower each time, until the second- or third-narrowest setting is used. (Do not roll too thin or pasta will tear when filled.)
  • Put pasta sheet on a lightly floured kitchen towel (not terry cloth) with a long side nearest you. Drop 6 rounded teaspoon-size mounds of filling 10 inches apart in a row down center of right half of sheet. Brush pasta around mounds of filling lightly with water, then lift left half of sheet and drape over mounds.
  • Press down firmly but gently around each mound, forcing out air. (Air pockets increase the chance that ravioli will break during cooking.) Cut pasta (between mounds) with a sharp knife into roughly 2-inch squares. Line a large shallow baking pan with a lightly floured kitchen towel (not terry cloth), then arrange ravioli in 1 layer in it. Make more ravioli with remaining pieces of dough and remaining filling, transferring to lined pan.
  • Cook ravioli and Asparagus tips:
  • Bring a pasta pot of salted water (2 tablespoons salt for 6 quarts water) to a boil over high heat, then reduce heat to a gentle boil.
  • Bring reserved broth to a simmer, then simmer asparagus tips, uncovered, until tender, 2 to 3 minutes. Season broth with salt, then divide broth and asparagus tips among 6 shallow bowls, discarding cheese rind and bay leaf.
  • Add half of ravioli to gently boiling water, carefully stirring to separate, and cook, adjusting heat to keep at a gentle boil, until pasta is just tender, 2 to 3 minutes. Lift cooked ravioli with a slotted spoon, draining well over pot, then transfer to bowls with broth. Repeat with remaining ravioli.

Number Of Ingredients 10

1 cup shelled fresh or frozen green peas
1 cup water
1 tablespoon chopped green onion
1/2 teaspoon salt
1 pound slender asparagus
3/4 cup fresh whole-milk ricotta cheese (6 ounces)
1 teaspoon minced fresh mint
1 large egg
Fresh Egg Pasta
Extra-virgin olive oil

Steps:

  • Bring first 4 ingredients to boil in small saucepan. Cook uncovered until peas are just tender, about 3 minutes. Cool slightly. Tips:

  • Use fresh asparagus. Fresh asparagus will have a bright green color and snap when you bend it. Avoid asparagus that is limp or woody.
  • Cook the asparagus properly. Asparagus can be cooked in a variety of ways, including steaming, roasting, and grilling. Be careful not to overcook it, as this will make it tough and stringy.
  • Use a good quality Dijon mustard. Dijon mustard is a key ingredient in the Dijon Alfredo sauce. Make sure to use a good quality mustard that has a sharp, tangy flavor.
  • Grate the Parmesan cheese fresh. Freshly grated Parmesan cheese will have a much better flavor than pre-grated cheese.
  • Serve the dish immediately. Asparagus and ravioli with Dijon Alfredo sauce is best served immediately after it is made. This will prevent the asparagus from becoming overcooked and the sauce from congealing.

Conclusion:

Asparagus and ravioli with Dijon Alfredo sauce is a delicious and easy-to-make dish that is perfect for a quick and easy weeknight meal. The asparagus is tender and flavorful, the ravioli is light and fluffy, and the Dijon Alfredo sauce is creamy and tangy. This dish is sure to be a hit with your family and friends.
