24 spears medium-sized asparagus
4 sprigs fresh rosemary
Good rashers of pancetta
4 good anchovies (optional)
Olive oil
1/2 lemon
1 knob butter

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Remove the woody ends of the asparagus by bending them at the end and snapping where it clicks naturally. Feel free to boil your asparagus for a minute or so if they are not as tender as they should be.
  • Grab 6 spears of asparagus, sandwich one of the rosemary sprigs and one of the anchovy fillets among the spears, and wrap a slice of pancetta around the middle to hold everything in place. Make three more bundles in the same way , and out them into a small roasting tray or pan with ? lemon. Drizzle with a little olive oil and roast in the pre-heated oven for 4 to 5 minutes, until the pancetta is crispy.

2 tablespoons olive oil
3 garlic cloves, minced

  • Preheat oven to 400°F.

Got this from the Cooking Light magazine April issue. This is so delicious! It says it makes 8 servings but I must admit that DH and I had no trouble eating the whole thing. Yum! Prep time includes rising time for the dough.

1/2 cup warm water
1 teaspoon dry yeast
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon dried thyme
2 ounces pancetta
1 garlic clove
1/8 teaspoon salt
1/8 teaspoon fresh ground black pepper
1/4 lb fresh asparagus
1/4 cup shredded mozzarella cheese
1/4 cup fresh parmesan cheese

Steps:

  • To make dough:.
  • Combine warm water(100 - 110 degrees) with yeast in a medium sized bowl; let stand 5 minutes.
  • After it has proofed for 5 minutes, add 1 cup flour and 1/2 teaspoon salt to yeast. Stir to blend.
  • Turn out onto a lightly floured board and knead until smooth and elastic.(about 8 minutes) Add additional 1/4 cup flour as needed to prevent the dough from sticking to your hands. This is a slightly sticky dough when finished.
  • You can also knead in a stand mixer until smooth and it climbs up the dough hook.
  • Place in a bowl that has been coated with cooking spray. Turn dough to coat top with spray. Cover and let rise about 45 minutes until doubled in size.
  • To make topping:.
  • Heat a small skillet over medium heat. Finely chop pancetta. Mince garlic clove. Add pancetta, garlic and thyme to skillet. Saute about 5 minutes or until pancetta is crisp. Stir in 1/8 teaspoon each salt and pepper. Set aside.
  • Wash and trim asparagus. Unless you have extremely thin asparagus, slice in half or quarters lengthwise to make very thin pieces.
  • preheat oven to 475 degrees.
  • Punch dough down; cover and let it rest 5 minutes.
  • Roll out onto a floured surface into a 10 inch circle. (mine ended up looking rather oblong but it still tasted great!).
  • Place on a baking sheet that has been sprayed with cooking spray.
  • Spread pancetta mixture evenly over the top. Place asparagus pieces over top. Sprinkle with mozzarella.
  • Bake for 10-15 minutes until dough is golden brown on bottom. (the top doesn't get as brown).
  • While it is baking, make shaves of parmesan cheese using a vegetable peeler.
  • When flatbread is done, remove from oven and top with parmesan.
  • Enjoy!

1 cup heavy cream
1/2 cup whole milk
1 whole large egg
2 large egg yolks
1/8 teaspoon salt
Pinch of white pepper
For soup
1 large leek (white and pale green parts only), finely chopped (1 1/4 cups)
1/2 cup finely chopped shallot
1/4 teaspoon black pepper
3/4 teaspoon salt
2 tablespoons unsalted butter
2 1/2 lb asparagus, trimmed and cut into 1 1/2-inch pieces
3 1/2 cups low-sodium chicken broth
1 1/2 cups water
1/4 cup heavy cream
Garnish: Parmigiano-Reggiano curls, shaved from a wedge with a vegetable peeler

Steps:

  • Make custards:
  • Bring cheese, cream, and milk just to a boil in a small heavy saucepan over moderate heat, stirring occasionally. Remove from heat and steep, covered, 30 minutes.
  • Preheat oven to 300°F.
  • Pour steeped cream through a very fine sieve into a bowl, pressing lightly on cheese solids and discarding them. Whisk together whole egg, yolks, salt, and white pepper in another bowl, then add steeped cream in a stream, whisking until smooth. Divide among well-buttered ramekins.
  • Set ramekins in a baking pan and bake in a hot water bath in middle of oven until centers of custards are completely set, 40 to 45 minutes. Transfer ramekins to a rack and cool 5 minutes (do not allow to cool longer, or custards will stick to ramekins).
  • Make soup while cream steeps and custards bake:
  • Wash chopped leek in a bowl of cold water, then lift out and drain well. Cook leek, shallot, pepper, and 1/2 teaspoon salt in butter in a 4- to 6-quart heavy pot over moderately low heat, stirring, until leek is softened, about 3 minutes. Add asparagus, broth, and water and simmer, covered, until asparagus is just tender, 10 to 12 minutes. After 2 to 4 minutes, remove 6 asparagus tips, halve lengthwise and reserve for garnish.
  • Purée soup in batches in a blender until smooth (use caution when blending hot liquids). Transfer to a large bowl, then pour through a sieve into cleaned pot. Stir in cream, remaining 1/4 teaspoon salt, and pepper to taste and heat over moderately low heat until hot.
  • Serve soup with custards:
  • Working with 1 custard at a time, run a thin knife around edge of each to loosen it, then invert a soup bowl over ramekin and invert custard into bowl. Repeat with remaining custards. Ladle soup around custards and garnish with reserved asparagus tips and parmesan curls.

500g asparagus
2 lemons
100g thinly sliced pancetta
500g farfalle
50g butter
284ml carton double cream
2 cooked skinless, boneless chicken breasts (about 250g/9oz total weight), torn into strips
a few gratings of fresh nutmeg
50g parmesan , freshly grated, plus extra for serving

Steps:

  • Trim the asparagus and cut into short lengths on the diagonal - keep the tips separate. (If you like, peel the stems to give a more vibrant colour when cooked.) Cook the stems in salted boiling water for about 4 minutes, then add the tips and cook for 1 minute more. Drain and refresh under cold running water.
  • Peel the lemons with a serrated knife, remove all the white pith, then cut into segments by slicing each side of the pieces of membrane. Now cut the segments into small pieces (flick out any pips) and put them in a bowl with any juice. Grill the pancetta for 3-4 minutes until crisp - keep an eye on it because it can burn easily.
  • Meanwhile cook the pasta in plenty of well-salted boiling water until al dente.While it's cooking, put the butter and half the cream in a large pan and let them bubble together over a low heat for 2-3 minutes until thickened slightly. Tip in the lemon segments and juice, the chicken, asparagus and a few pinches of salt. Turn off the heat.
  • Drain the pasta and add it to the contents of the pan along with the rest of the cream. Toss well, adding black pepper and nutmeg to taste, and the grated parmesan. Toss again, top with the pancetta and serve immediately.

1 pound medium asparagus (1/2 inch thick; 12 to 15)
1 tablespoon extra-virgin olive oil
12 to 15 thin slices pancetta
Equipment:
4 (12-inch) wooden skewers, soaked in water 30 minutes

Steps:

  • Prepare a grill for direct-heat cooking over medium-hot charcoal (medium-high heat for gas).
  • Trim asparagus to 6 inches long, then toss with oil and 1/4 tsp pepper in a small dish. Wrap middle of each asparagus with 1 slice of pancetta. Thread 3 or 4 wrapped asparagus 1/2 inch apart onto each skewer.
