ASIAN-STYLE THREE BEAN SALAD

Asian-Style Three Bean Salad image

By Ellie Krieger, as featured in her book "The Food You Crave" and also in Fitness Magazine. Three-bean salad gets an exciting Asian twist, made with a trio of legumes all commonly used in the Far East: green beans, edamame and black beans. The dressing is sweet and tangy just as in the traditional recipe, but this one, inspired by Chinese duck sauce, gets its sweetness from apricot preserves and has a zingy hint of fresh ginger.

ASIAN THREE-BEAN SALAD

Time 30m

Yield 6 to 8 servings

Number Of Ingredients 12

Kosher salt
12 ounces green beans, trimmed
12 ounces yellow wax beans, trimmed
1 1/2 cups frozen shelled edamame
2 teaspoons sesame seeds
1/2 cup fresh cilantro, chopped
2 scallions, thinly sliced
1/4 cup mustard vinaigrette (see directions)
2 tablespoons pickled ginger, finely chopped
1/2 red or green jalapeno pepper, thinly sliced (remove seeds for less heat)
1 tablespoon ponzu sauce
1/2 teaspoon toasted sesame oil (optional)

Steps:

  • Bring a large pot of salted water to a boil. Add the green beans and yellow wax beans and cook until crisp-tender, about 7 minutes, adding the edamame after 3 minutes. Drain the beans and edamame and run under cold water. Shake off the excess water and transfer to a large bowl.
  • Meanwhile, toast the sesame seeds in a small dry skillet over medium heat, stirring occasionally, until lightly browned, about 5 minutes. Remove from the heat.
  • Add the toasted sesame seeds, cilantro, scallions, vinaigrette, pickled ginger, jalapeno, ponzu sauce and sesame oil to the beans. Toss to combine; season with salt.
  • Whisk 1/4 cup white wine vinegar, 1 tablespoon dijon mustard, 1/2 teaspoon kosher salt and a few grinds of pepper in a bowl. Slowly drizzle in 2/3 cup olive oil, whisking constantly, until thick and smooth. Add more salt and pepper to taste. (Makes about 1 cup.)

Tips:

  • Choose fresh and high-quality ingredients: Using fresh and flavorful ingredients will greatly enhance the taste of your salad. Look for crisp and colorful beans, crunchy vegetables, and aromatic herbs.
  • Prepare the beans properly: If using dried beans, soak them overnight or for at least 8 hours before cooking. This will help reduce their cooking time and make them more digestible. If using canned beans, rinse them well before using to remove excess sodium.
  • Cook the beans to perfection: Beans should be cooked until they are tender but still hold their shape. Overcooked beans will become mushy and lose their texture.
  • Use a variety of vegetables: This salad is a great way to use up leftover vegetables. Feel free to add any vegetables that you like, such as chopped cucumbers, bell peppers, carrots, or radishes.
  • Make your own dressing: The dressing for this salad is simple to make and can be tailored to your own taste. You can adjust the amount of vinegar or honey to make it more or less tangy, and you can also add a pinch of red pepper flakes for a bit of heat.
  • Let the salad marinate: Marinating the salad for at least 30 minutes before serving allows the flavors to meld together. This will result in a more flavorful and delicious salad.

Conclusion:

This Asian three-bean salad is a delicious and healthy side dish that is perfect for any occasion. It is easy to make, customizable to your own taste, and packed with protein, fiber, and vitamins. So next time you are looking for a healthy and flavorful salad, give this Asian three-bean salad a try!
