Asian Style Green Bean and Potato Stir Fry image

A tasty side dish to complement an Asian style dinner. Soft potato slices, with green onions, green beans, and sesame seeds. I first made this recipe with Chicken Chow Mein it turned out so amazing I decided it was worth sharing. I was trying to imitate the potato dishes I have had at Chinese restaurants. Note it is important to use fresh green beans to get the full flavor of this dish.

Tips:

  • Use fresh green beans: Fresh green beans are more flavorful and have a better texture than frozen or canned green beans.
  • Trim the green beans properly: To trim the green beans, simply snap off the ends. You can also use a knife to cut off the ends if you prefer.
  • Cut the potatoes into uniform pieces: This will help them cook evenly.
  • Use a large skillet or wok: This will give you plenty of room to stir-fry the vegetables.
  • Heat the skillet or wok over high heat: This will help to create a nice sear on the vegetables.
  • Add the vegetables to the skillet or wok in batches: This will prevent them from overcrowding and steaming instead of stir-frying.
  • Stir-fry the vegetables until they are tender-crisp: This should take about 5-7 minutes.
  • Add the sauce ingredients to the skillet or wok: Stir to combine and cook for 1-2 minutes, or until the sauce has thickened.
  • Serve the stir-fry immediately: This dish is best served hot.
