Categories     Food & Cooking     Salad Recipes

Number Of Ingredients 18

1 cup mayonnaise
2 tablespoons toasted sesame oil
2 tablespoons mirin or rice-wine vinegar
1/4 cup chili sauce
3 tablespoons freshly squeezed lime juice
1 tablespoon grated ginger
1 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
2 teaspoons sesame seeds
1/2 small head red cabbage (about 1 pound)
1/2 head napa cabbage (about 1 pound)
1 turnip, peeled (about 9 ounces)
1 small daikon, peeled (about 8 ounces)
1 large carrot, peeled
4 scallions, thinly sliced on the diagonal
1 red bell pepper, seeded and thinly sliced
1/4 cup finely chopped fresh mint leaves
1/4 cup finely chopped fresh cilantro

Steps:

  • Make the dressing: In a medium bowl, whisk together mayonnaise, sesame oil, vinegar, chili sauce, lime juice, ginger, salt, pepper, and sesame seeds; set dressing aside.
  • Make the slaw: Core the red and napa cabbages, quarter, and slice very thinly. Transfer to a large bowl. Fill bowl with cold water to cover cabbage. Swish cabbage around with hands so any dirt settles to the bottom of the bowl. Lift cabbage, and transfer to a colander to drain. Place in large bowl; set aside.
  • Using the large holes of a box grater, grate the turnip, daikon, and carrot. Add to bowl of cabbage along with scallions, red bell pepper, mint, and cilantro. Add reserved dressing, and toss to combine. Cover with plastic wrap, and let sit at least 2 hours in the refrigerator, but preferably overnight. Serve chilled. Will keep in refrigerator for up to 4 days.

Tips:

  • For a truly authentic Asian slaw, use a sharp knife to finely shred the cabbage, carrots, and bell pepper. This will help the vegetables absorb the flavors of the dressing better.
  • If you don't have time to make the spicy Thai vinaigrette from scratch, you can substitute a store-bought Asian dressing. Just be sure to choose one that is not too sweet.
  • To save time, you can use a pre-packaged coleslaw mix. However, be sure to rinse the coleslaw mix thoroughly before using it, as it can sometimes contain unwanted preservatives.
  • If you like your slaw with a bit of a kick, add a pinch of cayenne pepper or red pepper flakes to the dressing. You can also add a splash of Sriracha sauce for an extra spicy kick.
  • Asian slaw is a great make-ahead dish. Simply prepare the slaw and dressing ahead of time and then store them separately in the refrigerator. When you're ready to serve, just combine the slaw and dressing and toss to coat.

Conclusion:

Asian slaw with spicy Thai vinaigrette is a refreshing and flavorful side dish that is perfect for any occasion. It is also a healthy and nutritious dish that is packed with vitamins and minerals. So next time you're looking for a quick and easy side dish, give this Asian slaw a try. You won't be disappointed!
