2 atlantic salmon fillets
50 g rocket
100 g bean sprouts
1/2 red onion, finely sliced
2 spring onions, finely sliced
50 g sugar snap peas
sesame seeds
1 garlic clove
1/2 teaspoon ground turmeric
1 sprig fresh rosemary, finely chopped
1/2 tablespoon honey
1 teaspoon coarse grain mustard
1/2 lime, juice of
1 shallot, finely chopped
3 tablespoons lime-infused oil (if you don't have lime infused oil, olive oil with lime zest works well)
2 tablespoons sesame oil
1 teaspoon freshly ground ginger
1/2 garlic clove, crushed
1/2 tablespoon honey
1/2 lime, juice of

Steps:

  • Combine all marinade ingredients in a bowl and stir well.
  • Place salmon fillets in a shallow dish and cover with marinade.
  • Rub the marinade gently on to the salmon and allow to rest while preparing the salad (5-10 minutes is more than enough time for the flavours to infuse).
  • Combine salad ingredients (except sesame seeds) in a large bowl and then place on to the serving plates.

  • Place salmon fillets top-side down in a hot non-stick pan. Reduce to a medium heat and cook each side for 3-4 minutes depending on the thickness, turning only once. Salmon is best served rare to medium-rare.
  • Place Atlantic Salmon with side salad and serve.

ASIAN SALMON SALAD

Categories     Food & Cooking     Ingredients     Seafood Recipes     Salmon Recipes

Number Of Ingredients 7

Salmon
Shredded carrots
Vegetable oil
Lime juice
Toasted sesame oil
Spring mix or other greens
Slightly warm cooked brown rice

Steps:

  • Grill salmon, then flake. Dress carrots with vegetable oil, lime juice, and sesame oil. Toss with greens and rice. Top with salmon.

Tips:

  • Choose the right salmon. Look for wild-caught salmon that is firm and has a bright color. Avoid farmed salmon, as it is often lower in nutrients and higher in contaminants.
  • Cook the salmon properly. Salmon is a delicate fish, so it is important to cook it gently. The best way to do this is to bake it in the oven or grill it over medium heat.
  • Use fresh ingredients. The fresher the ingredients, the better the salad will taste. If you can, use organic produce whenever possible.
  • Don't overdress the salad. A light vinaigrette is all you need to dress the salad. Too much dressing will overpower the flavors of the salmon and the vegetables.
  • Serve the salad immediately. Asian salmon salad is best served immediately after it is made. The longer it sits, the more the flavors will meld together and the salad will become less refreshing.

Conclusion:

Asian salmon salad is a healthy and flavorful dish that is perfect for a light lunch or dinner. It is packed with protein, omega-3 fatty acids, and antioxidants. The combination of sweet, sour, and salty flavors is sure to please everyone at your table. So next time you are looking for a quick and easy meal, give Asian salmon salad a try.
