2 cups long-grain white rice

Steps:

  • Make several shallow slashes in the skinless side of the salmon fillets. Place fillets skin-side down in a glass baking dish. In a medium bowl, whisk together the olive oil, rice vinegar, soy sauce, brown sugar, garlic, pepper, onion and sesame oil. Pour the liquid over the salmon, cover, and refrigerate for 1 to 2 hours.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium saucepan, combine the rice, water, and dill weed. Cover pan, bring to a boil, then reduce heat to low and cook 20 minutes, until rice is tender and water has been absorbed. Allow to stand for 5 minutes before removing lid and fluffing rice with a fork.
  • Remove cover from salmon, and bake the fish and the marinade for about 30 minutes, or until fish can be flaked with a fork. Serve salmon over the rice, and pour sauce over.

1 cup soy sauce
1/4 cup rice vinegar
1/4 cup freshly squeezed lemon juice (2 lemons)

1 tablespoon fish sauce
1 tablespoon toasted (dark) sesame oil
1 1/2 teaspoons chili paste
1/2 cup sliced scallions (2 scallions)
2 tablespoons minced garlic (8 large cloves)
2 tablespoons minced fresh ginger
1 1/2 cups panko (Japanese bread crumbs)

Steps:

  • Line an 8 by 12-inch baking pan with aluminum foil. Place the salmon in the pan.
  • In a mixing cup, combine the soy sauce, rice vinegar, lemon juice, oyster sauce, fish sauce, sesame oil, chili paste, scallions, garlic, and ginger. Pour 1/3 of soy sauce mixture over the salmon fillet. Sprinkle the panko evenly over the fillet. Pour the rest of the soy sauce mixture evenly over the panko. Be sure to soak the panko completely and if any runs off, spoon back onto the salmon. Set aside for 15 minutes, leaving all the sauce in the pan.
  • Meanwhile, preheat the oven to 500 degrees F. Roast the salmon for 18 to 20 minutes, or for about 12 minutes per inch at the thickest part of the salmon. The internal temperature will be 120 degrees F on a meat thermometer when it's done. Remove from the oven, wrap tightly with aluminum foil, and allow to rest for 15 minutes. Serve hot or at room temperature.

2 1/4 cups cold water, for poaching the fish
2 limes, leaves torn into pieces (or use extra lime zest and juice)
4 approximately 1-inch thick salmon fillets, preferably organic, skinned (about 1 1/2 pounds in total)
3 tablespoons unsalted butter
1 teaspoon oil
1 onion, finely chopped
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon turmeric
1 cup basmati rice
3 hard-boiled eggs, quartered (optional)
3 tablespoons chopped cilantro leaves, plus more, for garnish
1 lime, zested and juiced plus lime segments, for garnish
fish sauce, to taste (recommended -- nam pla)

Steps:

  • Preheat the oven to 425°F Pour the water into a roasting pan, add the lime leaves and then the salmon. Cover the pan with foil, put in the oven and cook for about 15 minutes, by which time the salmon should be tender. Remove the pan from the oven and drain the liquid off into a pitcher. Keep the fish warm simply by replacing the foil on the pan.
  • Melt the butter in a wide, heavy saucepan that has a tight-fitting lid, and add the oil to stop the butter burning. Soften the onion in the pan and add the spices, then keep cooking till the onion is slightly translucent and suffused with soft perfume of the spices. Add the rice and stir with a wooden spoon so that it's all well coated. There's not enough onion to give a heavy coating: just make sure the rice is fragrantly slicked.
  • Pour in the reserved liquid from the pitcher, about 2 1/4 cups, and stir before covering with the lid and cooking gently for 15 minutes.
  • At the end of the cooking time, when the rice is tender and has lost all chalkiness, turn off the heat, remove the lid, cover the pan with a dish towel and then replace the lid. This will help absorb any extra moisture from the rice. It is also the best way to let the rice stand without getting sticky or cold.
  • Just before you want to eat, drain off any extra liquid that's collected in the dish with the salmon, then flake the fish with a fork. Add to it the rice, egg, cilantro, lime juice and a drop or 2 of fish sauce. Stir gently to mix (use a couple of wooden paddles or spatulas) and taste to see if you want any more lime juice or fish sauce. Sprinkle over the zest from the 2 juiced halves of the lime and serve. You can garnish with lime segments and a small handful of freshly chopped cilantro.

  • Combine dressing ingredients in a medium size mixing bowl, whisk thoroughly and let stand until ready to use.
  • In an 8-inch saucepan, fill 3/4 with water. Bring to a boil. Place 14 inches of plastic wrap on a flat surface. Add 1/2 cup each of yellow, red and orange peppers on plastic wrap. 3 Tablespoons pure maple syrup
2 teaspoons fresh grated ginger root*
2 teaspoons fresh lime juice
2 teaspoons soy sauce
1½ teaspoons fresh minced garlic
1 bunch green onions, trimmed and sliced lengthwise (for planking only)
1½ pounds Alaska Salmon

Steps:

  • Soak wood plank in water 30 minutes to 2 hours. Blend maple syrup, ginger, lime juice, soy sauce and garlic. Brush or spoon 1/2 to 1 teaspoon glaze on each Alaska Salmon portion or all onto large fillet/salmon side. Let the salmon rest 5 minutes before cooking. Heat grill to medium-high heat. Pat wood plank with paper towels and spray-coat or lightly oil one side. Place green onions on plank; top with salmon. Grill salmon using indirect heat (not directly over heat) in covered grill for 10 to 15 minutes. Cook just until salmon is opaque throughout.
  • *Add 1/4 teaspoon crushed red pepper flakes for additional heat, if desired.

1/2 cup reduced sodium soy sauce
1/2 tablespoon fresh orange juice or 1/2 tablespoon prepared orange juice
1/2 tablespoon fresh lime juice
1/2 tablespoon prepared Chinese mustard
1/2 tablespoon Chinese five spice powder
16 ounces salmon fillets
1 tablespoon sesame oil
1 tablespoon sesame seeds

Steps:

  • With a spoon mix together soy sauce, juices, mustard and spice powder in a shallow dish or pan.
  • Add salmon and turn to coat all sides; cover and refrigerate for 1 hour.
  • Bring salmon back to room temperature and preheat broiler.
  • Remove salmon from the marinade and pat dry with paper towels.
  • Brush sides and tops of fillets with sesame oil and place on broiler pan; broiler 4 inches from heat until fish is cooked through, about 5 minutes (you might want to spray your broiler pan w/cooking spray).
  • While fish is broiling heat a small skillet over medium-high heat until hot; Add sesame seeds and, stirring constantly, toast just until golden -be careful, seeds can go from golden to burnt in a flash.
  • Remove skin from salmon, transfer to serving plates and garnish each with toasted sesame seeds.

1 cup mayonnaise
4 teaspoons soy sauce
1 1/2 teaspoons sugar
2 teaspoons wasabi, paste (or to taste)
1/2 cup soy sauce
2 -4 garlic cloves, chopped (to taste)
2 tablespoons lemon juice, plus
2 teaspoons lemon juice
4 teaspoons sugar
4 salmon fillets

Steps:

  • Mix all the ingredients for wasabi mayonnaise and place in refrigerator. The longer the better.
  • Mix or whisk all the marinade ingredients and pour in a large sealable bag over the salmon (I like to use the 1 gallon freezer bags).
  • Rotate the bag a few times (make sure the bag is closed) to make sure marinade gets all over all of the pieces of salmon.
  • Marinate in the refrigerator for at least 30 minutes (salmon can handle a little longer if you wish, but I wouldn't go over 2 hours).
  • Grill on high heat for 4 to 5 minutes on each side, or until done. Internal temperature should be 140 degrees.
  • Serve with wasabi mayonnaise.

1 large egg white
1 tablespoon finely grated peeled fresh ginger
2 tablespoons soy sauce
1/4 cup all-purpose flour (spooned and leveled)
Nonstick cooking spray
4 hamburger buns, lightly toasted
Bibb lettuce
Chinese mustard (optional)

Steps:

  • In a large bowl, flake and mash salmon fillets. Stir in roasted vegetables, water chestnuts, egg white, ginger, and soy sauce until combined. Add flour and stir to combine. Divide into 4 patties. Lightly coat a large nonstick skillet with nonstick cooking spray and heat over medium; add patties and cook until golden brown and cooked through, about 8 minutes, flipping halfway through.
