4 rhodes frozen texas rolls or 6 dinner rolls, thawed to room temperature
1/4 cup hoisin sauce, divided
2 cups shredded rotisserie chicken
1 cup grated mozzarella cheese, divided
2 tablespoons green onions
1/3 cup yellow pepper, strips
1/3 cup red pepper, strips
grated carrot
chopped fresh cilantro

Steps:

  • Spray counter lightly with non-stick cooking spray.
  • Combine rolls into a ball and roll into a 13-inch circle.
  • Cover with plastic wrap and let rest 15 minutes.
  • Remove wrap and place dough on a sprayed 12-inch pizza pan.
  • Spread dough evenly with 2 tablespoons hoisin sauce.

1 (4-inch) ball prepared dough, at room temperature
2 tablespoons olive oil
1/4 cup hoisin sauce (available in the Asian section of most grocery stores)
2 grilled skinless, boneless chicken breasts, diced or equivalent amount of store-bought BBQ chicken, or any left-over chicken
4 scallions, finely sliced
2/3 lightly-packed cup cilantro leaves, stems removed before measuring
1/2 red bell pepper, seeds and membranes discarded, sliced into paper-thin strips
1 cup grated mozzarella
Salt and freshly ground pepper

Steps:

  • Sprinkle your rolling surface with a handful of flour or cornmeal. Place dough directly in the middle of the surface. Roll dough out gently 1/4-inch thick, into either a 12-inch rectangle or circle. Brush both sides with olive oil and set aside until ready to grill.
  • Place dough in the center of the cooking grate, directly over the heat for one to three minutes, until the crust is well marked and browned. Flip dough and spread hoisin sauce evenly over cooked side of crust. Spread chicken, scallions, cilantro, and bell pepper evenly over crust. Sprinkle cheese over the top. Move to Indirect heat (for charcoal: the side of charcoal grill that has no coals. For gas: turn off burner directly under pizza). Cover grill and cook for 5 to 10 minutes, or until bottom is well browned, and cheese is fully melted.
  • Remove from grill, season with salt and pepper, and slice. Serve immediately.

1 pizza dough, any brand
1/2 cup duck sauce or plum sauce
1/2 teaspoon crushed red pepper flakes
1 package (2 cups) shredded provolone or Monterey Jack cheese
1/2 red bell pepper, thinly sliced
1 tablespoon vegetable oil
2 tablespoons soy sauce
1 rounded tablespoonful peanut butter
2 teaspoons hot sauce
2 teaspoons grill seasoning (recommended: Montreal Steak Seasoning) eyeball it
4 chicken breast cutlets, 1/2 pound
2 tablespoons honey
2 tablespoons rice wine vinegar or cider vinegar
1/4 seedless cucumber, peeled and cut into matchsticks
4 scallions, chopped
1 cup bean spouts, a couple of handfuls
Palm full cilantro leaves, chopped
1/4 cup chopped peanuts, 2 ounces

Steps:

  • Preheat oven to 425 degrees F.
  • Form pizza crust on pizza pan or cookie sheet. Top with duck or plum sauce - spread it around like you would pizza sauce. Sprinkle the pizza with some crushed red pepper flakes then top with cheese and peppers. Bake until golden and bubbly, 15 to 17 minutes.
  • Preheat a grill pan over medium-high heat. Combine vegetable oil, soy sauce and peanut butter with hot sauce and grill seasoning. Use the microwave to loosen up peanut butter if it is too cold to blend into sauce, 10 seconds ought to do it. Add chicken and coat evenly with mixture. Let stand 10 minutes then grill chicken cutlets 2 to 3 minutes on each side, until firm. Slice chicken into very thin strips.
  • While chicken cooks, mix honey and vinegar and add the cucumber. Turn to coat evenly.
  • Top the hot, cooked pizza with chicken, scallions, sprouts and cilantro. Drain cucumbers and scatter over the pizza. Garnish pizza with peanuts, cut into 8 wedges and serve.

2 ounces small snow (Chinese) pea pods (1/2 cup)
