6 cups water
4 cups low sodium vegetable broth or 4 cups low-sodium tomato juice
3 large onions, chopped bite-size
1 green bell pepper, chopped Bite-size
6 celery ribs, chopped bite-size
10 carrots, chopped bite-size
2 (14 1/2 ounce) cans diced tomatoes, no salt added
4 cups cabbage, shredded
1/2 cup salsa
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/2 teaspoon red pepper flakes (optional)
1 teaspoon dried basil
1 teaspoon salt (optional)
2 teaspoons dried oregano
1 (10 ounce) envelope dry onion or 1 (10 ounce) envelope vegetable soup mix
5 dashes Tabasco sauce (to taste)

Steps:

  • Add water and Broth to large Stock Pot over medium-high heat.
  • Toss in all your chopped vegetables and other ingredients. Bring to a boil, then lower to simmer.
  • Cook until vegetables are tender, about 20 minutes.
  • SERVE and ENJOY!
  • This recipe makes 16 1-1/2 cup servings.

  • Before experimenting with the soup, I suggest you make the first batch exactly to get the nutritional values, and to also see how you really will not need to improve on it. It is delicious, it has some bite from the spices, it is filling and has no annoying cabbage taste, It is really comforting and full of flavor.
  • For the Soup mix, I use Lipton's Recipe Selects. They come in a box with two 10 ounce envelopes. For the cabbage, use a food processor or buy in a bag pre-shredded. 4 cups is about 1/2 head of a large cabbage. Where I live it is hard to find the Tomato Juice, but it is made by Campbell's. Sacramento brand has too much sodium. However, I find that the Vegetable Broth/Stock works just fine and is easier to get. For the canned tomatoes, you can also use canned Stewed tomatoes if they're available in low sodium.
  • Perfect for Lunch or Dinner when dieting with Low-Fat wheat crackers or a sandwich, and some sliced fruit.

I am a big fan of the Good Housekeeping Soup Diet and I've enjoyed it just as it is for awhile now. Recently I came across a new recipe in Woman's World magazine which is loaded with Antioxidants and it inspired me to combine the two recipes with a tweak or two here and there. I have posted this recipe in metric measurements as I have found that weights convert better than cups when it comes to vegetables and canned items.

1 teaspoon extra virgin olive oil
113 g carrots, sliced
85 g red onions, diced
85 g white onions, diced
60 g celery, sliced (1 stalk)
1 garlic clove, minced
398 ml diced tomatoes with juice
150 g sweet potatoes, with skin, scrubbed, diced into 1/4-inch cubes
540 ml black beans, drained
355 g cabbage, sliced
90 g cut green beans
350 ml low sodium chicken broth
350 ml water
566 g zucchini, sliced and quartered
125 g baby spinach leaves
125 g edamame
125 g red bell peppers
1 pinch dried oregano
1/4 teaspoon cumin
salt and pepper

Steps:

  • Heat oil in large pot over medium-high heat. Saute carrots, onions, celery and garlic, about 8 minutes or until vegetables soften, stirring occasionnally.
  • Add tomatoes with their liquid. Add all remaining ingredients. Heat to boiling over high heat, stirring occasionally.
  • Reduce heat to low; cover and simmer 20 minutes or until all vegetables are tender.

4 celery ribs, chopped
3 large onions, chopped
1 teaspoon salt
1 teaspoon pepper
1 garlic clove, minced
1 (28 ounce) can tomato juice
2 chicken bouillon cubes
6 cups water
2 (1 ounce) envelopes dry onion soup mix
1/2 cup balsamic vinegar
1/2 head cauliflower, cut into bite size pieces
3 zucchini, sliced
1 head cabbage, chopped
1 (15 ounce) bag fresh spinach leaves
1 (12 ounce) bag frozen cut green beans

Steps:

  • Over medium heat add oil, celery and onions to a large stock pot. Saute until tender.
  • Add garlic, salt & pepper, cook an additional 2 - 3 minutes.
  • Add tomatoe juice, bouillon cubes, water, onion soup mix and balsamic vinegar.
  • Add cauliflower and cook for approximately 5 minutes.
  • Stir in zucchini, cabbage. Cook for 5 - minutes.
  • Stir in spinach and green beans. Cook until desired doneness is reached.
  • You may add a bit of water to achieve the soupy consistency that you like.
