Time 35m

Yield 4 servings

Number Of Ingredients 16

One 15-ounce can tomato sauce
1/4 cup low-sodium soy sauce
1/4 cup light brown sugar
2 tablespoons tomato paste
2 tablespoons cider vinegar
1 teaspoon chopped garlic
1 teaspoon chopped ginger
1 teaspoon hot sauce
2 teaspoons canola oil
1 medium yellow onion, diced
1 green bell pepper, seeded and diced
1 pound ground pork
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1 small head green cabbage
4 hamburger buns, toasted

Steps:

  • For the sauce: In a bowl, whisk together the tomato sauce, soy sauce, brown sugar, tomato paste, vinegar, garlic, ginger and hot sauce until blended. Reserve 1/2 cup for the Round 2 Recipe Stuffed Cabbage Rolls, or another use. Set the rest of the sauce aside.
  • For the sloppy joes: In a large skillet over medium heat, add the oil. When it is hot, add the onions and peppers and cook until they are soft, about 5 minutes. Push the vegetables to one side of the pan and add the ground pork. Break up any lumps and sprinkle with salt and pepper. Cook until the pork is lightly browned, about 5 minutes. If there is a lot of fat in the pan, spoon some of it out and discard.
  • Add the sauce to the pan, bring to a simmer and cook until the pork mixture has thickened but is still a bit loose, about 15 minutes. Reserve 1 cup of the mixture for the Round 2 Recipe Stuffed Cabbage Rolls, or another use.
  • To serve, remove 2 leaves from the cabbage, roll them up like a cigar and slice into very thin strips. Reserve the remaining cabbage for the Round 2 Recipe Stuffed Cabbage Rolls, or another use. Divide the sloppy joe mixture onto the hamburger buns. Garnish with the sliced cabbage. Top with the bun tops and serve immediately.

1 seedless English cucumber or 4 small Persian or Kirby cucumbers
About 1/4 cup rice wine vinegar
2 tablespoons superfine sugar
1 tablespoon gochugaru Korean chili flakes or chili paste
1 1/2 teaspoons salt
1 teaspoon toasted sesame oil
1 teaspoon toasted sesame seeds
1 Asian pear or Bosc pear
1 onion, red or yellow
4 cloves garlic
1 inch ginger root
Neutral oil, such as peanut or safflower
1 pound ground beef
1/2 pound ground pork
Salt and pepper
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce, Lea and Perrins preferred brand
1/3 cup gochujang Korean paste, Mother in Law's preferred brand
1 cup beef or chicken stock
1 tablespoon light brown sugar
1 tablespoon toasted sesame oil
4 to 6 soft large hamburger rolls, Big Marty's preferred brand
4 scallions, whites and greens, chopped
2 green chilies, fresh finger or jalapeno, or pickled jalapeno peppers

Steps:

  • Gather your ingredients.
  • For the pickles: Thinly slice the cucumber 1/4 to 1/8-inch thick. In a bowl, whisk up rice wine vinegar, sugar, chili flakes, salt and sesame oil. Add sliced cucumbers and toss.
  • For sloppy joes: Peel and grate the pear on a wide tooth of box grater. Peel and chop the onion and slice or grate the garlic and ginger.
  • Heat a skillet over medium-high to high heat. Add the oil, 2 turns of the pan, then add the meats and brown and crumble. Season with salt and pepper. Add pear, onions, garlic and ginger and stir a couple of minutes to soften. Add soy sauce, Worcestershire, chili paste, stock, sugar and sesame oil. Bring to a bubble and reduce heat to simmer, 10 to 15 minutes.
  • Serve beef on rolls with scallions and fresh or pickled chili peppers and quick pickles.

Tips:

  • Use ground chicken or turkey: These leaner proteins will help reduce the fat and calories in your Sloppy Joes without sacrificing flavor.
  • Add plenty of vegetables: Shredded carrots, bell peppers, and zucchini are all great additions that will add nutrition and texture to your Sloppy Joes.
  • Use a flavorful sauce: The sauce is what makes Sloppy Joes so delicious, so make sure to use a sauce that is packed with flavor. A homemade sauce is always best, but you can also use a store-bought sauce if you're short on time.
  • Cook the Sloppy Joes until the meat is cooked through: This will help to ensure that the Sloppy Joes are safe to eat and that the flavors have had a chance to meld together.
  • Serve the Sloppy Joes on a toasted bun: This will help to soak up the sauce and make the Sloppy Joes even more delicious.
