Yield 6 as a side dish

Number Of Ingredients 17

¼ cup honey
¼ cup vegetable oil
¼ cup unseasoned rice vinegar
1 tablespoon soy sauce
1 teaspoon Asian sesame oil
1 tablespoon peanut butter (I like Skippy Natural No Need to Stir)
Heaping ½ teaspoon salt
1 teaspoon Sriracha sauce (optional)
1 tablespoon minced fresh ginger
1 large garlic clove, minced
4 cups prepared shredded coleslaw
2 cups prepared shredded carrots
1 red bell pepper, thinly sliced into bite-sized pieces
1 cup cooked and shelled edamame
2 medium scallions, finely sliced
½ cup chopped salted peanuts (or you can leave them whole)
½ cup loosely packed chopped fresh cilantro

Steps:

  • In a medium bowl, whisk together all of the ingredients for the dressing (be sure the peanut butter is dissolved). Set aside.
  • Combine all of the slaw ingredients in a large mixing bowl. Add the dressing and and toss well. Let the slaw sit for at least ten minutes so the vegetables have a chance to soak up the dressing. Taste and adjust seasoning if necessary (I usually add a bit more salt.) Serve cold. This slaw is best served fresh but leftovers will keep in a covered container in the refrigerator for a few days.
  • Make-Ahead Instructions: The dressing can be prepared up to 2 days ahead of time; store in a covered container in the refrigerator.

Had a lot of purple cabbage left over so I came up with this delicious slaw with an Asian dressing

Provided by barbara lentz

Categories     Vegetables

Time 10m

Number Of Ingredients 13

1/2 head purple cabbage chopped
1 medium carrot julienned
3 scallions diced
2 Tbsp black sesame seeds
DRESSING
1/2 c fish sauce
1/4 c mirin
1 lime juiced
1 Tbsp sesame oil
1 c sugar
3 clove garlic minced
1 Tbsp grated ginger
2 Tbsp korean pepper flakes or red pepper flakes

Steps:

  • 1. Mix the ingredients for the dressing together and set aside for the flavors to marry.
  • 2. Mix the slaw ingredients together and toss with the dressing. Serve cold

Tips:

  • Use a sharp knife or mandoline to thinly slice the cabbage. This will help the slaw absorb the dressing more easily and make it more tender.
  • If you don't have a mandoline, you can use a sharp knife to thinly slice the cabbage. Just be careful to slice it as thinly as possible so that it cooks evenly.
  • Be sure to rinse the cabbage thoroughly before slicing it. This will help remove any dirt or debris.
  • Use a variety of vegetables in your slaw. This will add color, flavor, and texture to the dish.
  • Don't be afraid to experiment with different dressings. There are many different types of dressings that can be used on slaw, so find one that you like and experiment with it.
  • Serve the slaw immediately or refrigerate it for later. Slaw is a great make-ahead dish, so you can make it ahead of time and store it in the refrigerator for later.

Conclusion:

Asian-inspired purple cabbage slaw is a delicious and healthy side dish that is perfect for any occasion. It is easy to make and can be customized to your liking. So next time you are looking for a healthy and delicious side dish, give this Asian-inspired purple cabbage slaw a try.
