ASIAN EDAMAME SALAD

Asian Edamame Salad image

Sometimes regular salads get reeeeeeeally boring, so having leftover steamed edamame from a local Chinese restaurant inspired me to make a different kind of salad. Just a few simple ingredients, and this became a wonderful option to the run-of-the-mill leafy types of salad. This recipe makes either a great side dish for grilled...

Time 10m

Number Of Ingredients 6

1 c edamame, shelled
1 medium red bell pepper, chopped
1/2 c carrots, shredded
1/2 c cabbage, shredded
1 Tbsp cilantro, chopped
sesame vinaigrette, to taste

Steps:

  • 1. Start with your shelled edamame in a medium-sized bowl.
  • 2. Add in red bell pepper, carrots, cabbage, and cilantro.
  • 3. I use a little help from the grocery store on the vinaigrette, this one is delicious. You can always make your own, though, if you prefer.
  • 4. I start with about 2 tablespoons of dressing, then toss to coat. Take a taste along the way, and add as much or as little as you like. Refrigerate leftovers, it will keep for a few days. Enjoy!

Tips:

  • Use fresh edamame: Fresh edamame is essential for this salad. Look for pods that are bright green and plump.
  • Blanch the edamame properly: Blanching the edamame helps to remove the fuzzy coating and make them more tender. Be sure to blanch them for the correct amount of time, or they will become overcooked.
  • Use high-quality soy sauce: The soy sauce is one of the key ingredients in this salad, so it's important to use a high-quality one. Look for a soy sauce that is naturally brewed and has a rich, umami flavor.
  • Don't overdress the salad: This salad is best when it's lightly dressed. Too much dressing will overwhelm the other flavors in the dish.
  • Serve the salad immediately: This salad is best served immediately after it's made. The edamame will start to lose its鮮嫩 if it sits for too long.

Conclusion:

This Asian-inspired edamame salad is a refreshing and flavorful dish that's perfect for a summer party or potluck. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a healthy and delicious salad, give this one a try.
