Korean Miso and Honey Glazed Cod image

This miso, honey, soy, garlic, and ginger glazed cod is perfectly cooked at lightning speed. It takes longer to cook the accompaniments than it does to get your gorgeous main dish on the table and it's perfect for either a quiet dinner at home or entertaining during Lent.

Categories     Main Course

Number Of Ingredients 14

1 1/2 pounds fresh cod *See notes (or thawed, previously frozen cod)
2 tablespoons mild honey
1 1/2 tablespoons rice vinegar
1 tablespoon gochujang **See notes
1 tablespoon white miso paste
1 teaspoon soy sauce
2 garlic cloves (peeled and minced or pressed through a garlic press)
1 teaspoon grated ginger
1 teaspoon toasted sesame oil
Optional: Beech mushrooms (separated from their base, tossed in 1 teaspoon canola or peanut oil and a pinch of salt ***See notes)
hot cooked rice
steamed broccoli
toasted sesame seeds
thinly sliced green onions

Steps:

  • Line a baking sheet with aluminum foil and oil it or spray it with non-stick cooking spray. Arrange the cod filets on the baking sheet.
  • In a small bowl, whisk together or use a fork to combine the honey, vinegar, gochujang, miso, soy sauce, garlic, ginger and sesame oil. Separate out about 2 tablespoons of the mixture and brush it over the fish. Let the fish rest in the refrigerator for at least 30 minutes but up to an hour to let the fish marinate.
  • Preheat your broiler to HIGH with a rack placed about 8 inches below the element. Scatter the prepared beech mushrooms around the fish filets and slide the pan onto the rack. Broil the fish for 3 to 5 minutes, or until the glaze is bubbly and charred in places. Remove the pan from the oven and turn the oven off of broil and up to 375°F. Brush the remaining glaze over the fish and return the pan to the oven for 5 to 10 minutes, depending on the thickness of your filets, or until they are opaque and flake easily with a fork.
  • Serve over rice and steamed broccoli and garnish with toasted sesame seeds and thinly sliced green onions.

The natural richness of salmon and it's high amount of Omega-3's makes it a great choice for a healthy meal that doesn't need much added fat. Time 28m

Yield 4 servings

Number Of Ingredients 12

1/4 cup packed cilantro leaves
2 scallions
2 teaspoons vegetable oil
1 teaspoon grated ginger
Kosher salt and freshly ground pepper
4 center cut skin-on wild salmon fillets, about 6 ounces each
2 teaspoons fresh lime juice
2 teaspoons low-sodium soy sauce
2 teaspoons honey
1/4 teaspoon black sesame seeds
1 1/3 cups cooked edamame
Lime wedges, optional garnish

Steps:

  • Preheat the grill over medium-high direct heat. Oil the grill grates. Finely chop the cilantro and scallion and mix in the oil and ginger. Season with salt and pepper.
  • Cut two 3-inch long slits through the skin lengthwise on the bottom of the salmon fillets, going about halfway into the salmon. Evenly stuff the slits with the herb mixture. Season the fish with salt and pepper.
  • Stir together the lime juice, soy and honey until smooth. Place the salmon, skin side up, on the grill and cook until well marked, 3 to 4 minutes. Turn the salmon and continue to cook, brushing the tops with the sauce, until the fish is cooked through, about another 3 to 4 minutes. Transfer to a serving plate and sprinkle the tops with the sesame seeds. Serve with edamame and lime wedges.
  • Broiler directions: Position an oven rack so that a baking sheet set on the rack is about 4-inches below the heat source. Preheat the broiler. Prepare the salmon as above and place the fillets, skin down, on a foil lined baking sheet coated with cooking spray. Broil, basting 3 to 4 times with the sauce, until just cooked through, about 6 to 7 minutes.

Tips:

  • Choose the right fish: For this recipe, it's best to use a firm-fleshed fish like salmon, swordfish, or tuna. These fish can withstand the heat of the grill without falling apart.
  • Make sure the fish is fresh: The fresher the fish, the better it will taste. Look for fish that is firm to the touch and has bright, clear eyes.
  • Marinate the fish: Marinating the fish in a mixture of honey, soy sauce, and spices helps to infuse it with flavor and keep it moist while it cooks.
  • Cook the fish over medium heat: Cooking the fish over medium heat helps to prevent it from burning or drying out.
  • Baste the fish with the marinade: Basting the fish with the marinade while it cooks helps to keep it moist and flavorful.
  • Don't overcook the fish: Fish is cooked through when it flakes easily with a fork. Overcooking will make the fish dry and tough.

Conclusion:

This Asian honey grilled fish recipe is a delicious and easy way to cook fish. The marinade infuses the fish with flavor, and the grilling process creates a slightly crispy exterior and a tender, flaky interior. Serve this fish with your favorite sides, such as rice, vegetables, or salad.
