'CHINESE BUFFET' GREEN BEANS
Every time my family and I go to a Chinese buffet we make a bee line for the green beans! This is a simple and tasty re-creation of that much loved side dish, goes well with any Asian meal. Make sure to slice the garlic, don't use a garlic press. Oyster sauce can be found in the Asian section of your grocery store, at an Asian grocery store, and online.

Steps:
- Bring a pot of water to a boil, add salt to taste and add the green beans. Boil 4 to 5 minutes, until just tender. Transfer (use a skimmer so that you don't have to drain the pot) to a bowl of cold water, then drain and set aside.
- Skin the favas. Bring the water in the pot back to a boil. Fill a bowl with ice water. Drop the shelled fava beans into the boiling water and boil 2 to 3 minutes (5 minutes if the beans are bigger than your thumbnail). Drain and transfer immediately to the cold water. Allow the beans to cool for several minutes, then slip off their skins by pinching off the eye of the skin and squeezing gently. Hold several beans in one hand and use your other thumb and forefinger to pinch off the eyes; have a bowl for the shelled favas close at hand and this will not take a very long time.
- Stir together the vinegar, lemon juice, salt, pepper, mustard, and garlic. Whisk in the oils. Toss with the green beans and favas, walnuts, tarragon and shallot in a salad bowl, and serve.

Tips:
- Choose fresh green beans: Look for green beans that are bright green in color and have a crisp texture. Avoid beans that are wilted or have brown spots.
- Trim the green beans: Before cooking, trim the ends of the green beans. You can also remove the strings from the beans if desired.
- Blanch the green beans: Blanching the green beans helps to preserve their color and crispness. To blanch the beans, bring a large pot of salted water to a boil. Add the green beans and cook for 2-3 minutes, or until they are bright green and tender. Immediately transfer the beans to a bowl of ice water to stop the cooking process.
- Cook the green beans: You can cook the green beans in a variety of ways, such as stir-frying, steaming, or roasting. Be careful not to overcook the beans, as they will become mushy.
- Add walnuts: Walnuts add a delicious nutty flavor and texture to the green beans. You can use chopped walnuts or walnut pieces.
- Season the green beans: Season the green beans with a variety of spices and herbs, such as garlic, ginger, soy sauce, and sesame oil. You can also add a touch of heat with red pepper flakes.
Conclusion:
Asian green beans with walnuts is a delicious and healthy side dish that is perfect for any occasion. The green beans are crisp and tender, the walnuts add a nutty flavor and texture, and the sauce is flavorful and slightly spicy. This dish is sure to please everyone at your table.
