2 center cut pork chops ((about 1-inch thick, 10-12 ounces/280-340g))
2 tablespoons vegetable oil

Steps:

  • Combine all ingredients from the soy sauce to the wine in a shallow dish. Marinate the pork chops in this mixture for 20 minutes to an hour.

1 tablespoon olive oil
1/4 cup soy sauce (low sodium)

4 cloves garlic (minced)

Steps:

  • Preheat oven to 400 F degrees.
  • In a medium size bowl whisk together the soy sauce, honey, garlic, ginger, sesame oil and sriracha sauce. Pour over pork chops and let marinade for about 20 minutes.

Steps:

  • Dry roast the sesame seeds in a small skillet over medium heat for about 3 minutes until toasted. Set aside. In a small bowl or measuring cup, add the rice wine vinegar, orange juice, mirin, ginger, brown sugar and mix well until sugar is dissolved. Make ½ inch deep cuts about 1 inch apart on the fat/silverskin edge of the pork chops. This will help prevent them from cupping when cooking. Dry well with paper towels and season with salt and pepper on both sides. Heat the vegetable oil in a 12-inch (30 cm) skillet over medium-high heat until beginning to smoke. Add the pork chops and cook until well browned, about 4 minutes (or longer if your chops are thick). Turn and cook another minute. Check the pork internal temperature; if your pork chops are on the thin side, they may already have reached the internal target temperature of 140℉ (60℃) F. If so remove to a plate and tent with foil. Add the glaze mixture to the skillet, and continue cooking the pork until the internal temperature reaches 140℉ (60℃) F (about 3 of 4 minutes) and transfer the pork chops to a plate, tent with foil and allow them to rest for 5 minutes. Remove the skillet from the heat. After resting, add any accumulated juices and reheat the skillet over medium heat. Simmer, whisking constantly, until the glaze is thick and caramel colored, from 2 to 5 minutes. Return the pork chops to the pan, turning to smother with the glaze and transfer to a platter, browned side up and spread with the remaining glaze. 4 boneless center cut pork chops (at least an inch thick)
1 Tbsp sesame oil
2 Tbsp olive oil
3 clove cloves garlic - sliced
4 slice slices fresh ginger - peeled
2 Tbsp toasted sesame seeds
salt & pepper
FOR THE GLAZE
1 jar(s) 16 oz. jar apricot preserves
2 Tbsp terriyaki sauce
1 Tbsp soy sauce
1 Tbsp fresh grated ginger
2 Tbsp cloves finely minced garlic

Steps:

  • 1. Blend all glaze ingredients together well and set aside.
  • 2. In a large shallow fry pan, heat both oils. Add Garlic and Ginger slices until they're golden brown. Remove and discard. Salt and pepper both sides of the chops. Sear/brown them quickly in the flavored oil. Remove from pan and set aside, covered with foil.
  • 3. Turn up the heat and deglaze the pan with the Glaze Sauce, stirring vigorously with a whisk. After about five minutes, turn down the heat and return the chops to the sauce, turning once to coat.
  • 4. Cover and allow to cook over low heat for 15 mins or until chops are just firm to finger pressure. Remove chops and set aside to rest (cover with foil to retain heat). Bring the sauce back to the boil and keep stirring until desired thickness. Return chops to sauce just before serving and sprinkle with toasted sesame seeds.
  • 5. Best served over jasmati rice. (To kick the rice up a notch: throw in 2 - 3 thick slices of fresh ginger in the water - remove before serving)

1 tablespoon chili garlic sauce, such as Sriracha
1 tablespoon toasted sesame oil
1 tablespoon light brown sugar

1 tablespoon peeled and finely grated fresh ginger
1 clove garlic, grated
1/2 cup hoisin sauce
4 bone-in pork chops (about 3 pounds)
Kosher salt and freshly ground black pepper
1 red onion, cut into 1/2-inch-thick slices
4 to 6 baby bok choy, halved lengthwise (about 1 pound)

Steps:

  • Preheat a grill to medium-high heat. Stir together the soy sauce, chili sauce, sesame oil, brown sugar, vinegar, grated ginger and grated garlic in a small bowl. Reserve 2 tablespoons for the vegetables and then stir in the hoisin sauce. Set half aside for serving with the cooked pork chops and stir in 1 to 2 tablespoons water.
  • Sprinkle the pork chops on both sides with 1/2 teaspoon each salt and pepper for all 4 chops. Place the pork chops and onions on a lightly oiled grill. Grill until the pork chops are just slightly pink near the bone, 6 minutes on the first side and 4 to 5 minutes on the second side. Grill the onions until they are soft. Start brushing both the pork and the onions with the hoisin sauce mixture about halfway through grilling. Transfer the pork chops to a cutting board to rest for about 5 minutes and the onions to a bowl.
  • Put the bok choy in a large bowl and cover with plastic wrap. Microwave until the center core has softened and can easily be pierced with the tip of a sharp knife, 3 to 5 minutes. Season the bok choy with 1/4 teaspoon each salt and pepper and grill until charred, 2 to 3 minutes per side. Add to the bowl with the onions and gently toss with the reserved 2 tablespoons ginger sauce. Serve the pork chops with the grilled vegetables and the reserved hoisin sauce mixture on the side.

2 tablespoons brown sugar
2 tablespoons rice vinegar

Eight 4-ounce thin pork chops, bone-in (about 1/4-inch thick)
2 tablespoons chopped fresh cilantro, for garnish

Steps:

  • Place 1/4 cup vegetable oil, sugar, vinegar, ginger, sriracha, sesame oil, garlic and orange juice and zest in a food processor and process for 15 seconds. Put the pork chops in a heavy-duty resealable plastic bag. Add half of the marinade and reserve the other half until serving. Squeeze out the air, seal and move the chops around in the bag to coat evenly. Marinate in the refrigerator at least 30 minutes, and up to 8 hours.
  • Preheat the oven to 375 degrees F.
  • Remove the chops from the bag. Place the reserved marinade in a small saucepot. Bring to a boil to reduce and thicken the sauce a bit, about 2 minutes.
  • Heat large stainless saute pan over medium-high heat and add the remaining 1 teaspoon oil. Brown the chops in the hot pan, 1 to 2 minutes per side. Place the saute pan in the oven and cook until done (155 degrees F internal temperature). Serve with a spoonful of the glaze, with cilantro and sliced green onions sprinkled on top.

1/4 teaspoon black pepper
1/4 teaspoon cinnamon
1/4 cup dry sherry or 1/4 cup water
1/4 cup hoisin sauce
1 green onion, chopped

Steps:

  • Sprinkle both sides of chops with seasoning.
  • Coat frying pan with oil and set over med high heat.
  • When hot add chops and reduce heat to medium and cook until golden about 3 minutes per side.
