ASIAN GLAZED CORNISH GAME HENS

Asian Glazed Cornish Game Hens image

I love this marinade but don't always want it on hens so I have substituted 4 bone-in chicken breast halves for the hens. I marinate at least 2 hours, baked at 400º for 50 minutes or until the chicken is cooked through. I poured marinade over the chicken before baking and basted every once in awhile as it was baking. This recipe is adapted from the Southern Living 2000 Annual.

Time 1h30m

Yield 4 serving(s)

Number Of Ingredients 5

2 Cornish hens (medium or large)
1/2 cup soy sauce
fresh lemon juice (from half of a lemon)
2 teaspoons sugar
4 garlic cloves (peeled and crushed)

Steps:

  • Preheat oven to 350°F.
  • In a large container, combine soy sauce, lemon juice, sugar and garlic. Marinate hens for 30 minutes.
  • Place hens along with the marinade in a baking dish. Cover with tin foil and cook for 1 hour.
  • Remove tin foil after 1 hour and continue to cook for another 15-25 minutes. (until the hens are lightly browned and the juices run clear).
  • Please note: Make sure to baste for the last 15-25 minutes of the cooking time.

Tips:

  • Mise en Place: Before starting, ensure all ingredients and equipment are ready and measured out to streamline the cooking process.
  • Brining the Cornish Game Hens: Brining adds flavor and moisture to the hens. Use a simple brine solution made with water, salt, sugar, and herbs for at least 30 minutes.
  • Thoroughly Pat Dry: After brining, pat the hens dry to ensure crispy skin during roasting.
  • Generous Seasoning: Use a flavorful rub or marinade to coat the hens inside and out. Experiment with various spices and herbs to create a unique flavor profile.
  • Stuffing the Hens: If desired, stuff the hens with a flavorful mixture of rice, vegetables, or your favorite stuffing recipe.
  • Trussing the Hens: Properly trussing the hens helps them cook evenly and retain their shape. Use kitchen twine to tie the legs and wings securely against the body.
  • Roasting Technique: Roast the hens breast-side up on a wire rack placed over a roasting pan. This allows the fat to drip away, resulting in crispy skin and juicy meat.
  • Basting: Baste the hens with the pan juices or a mixture of melted butter and herbs throughout the roasting process to keep them moist and flavorful.
  • Checking for Doneness: Use a meat thermometer to check the internal temperature of the hens. The hens are cooked when the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  • Resting before Carving: Allow the hens to rest for 10-15 minutes before carving. This helps the juices redistribute, resulting in more tender and flavorful meat.
