1 small carrot
1 small red onion, halved
1 pound ground chicken
1/4 cup panko (Japanese breadcrumbs)
1/4 cup hoisin sauce
1 tablespoon grated peeled ginger
4 teaspoons low-sodium soy sauce
3 teaspoons hot Asian chili sauce, such as sambal oelek
8 ounces white mushrooms, thinly sliced
2 teaspoons toasted sesame oil
Juice of 1 lime
4 whole-wheat sesame hamburger buns

Steps:

  • Preheat the oven to 375 degrees F. Mist a baking sheet with cooking spray. Grate the carrot and 1/2 onion into a large bowl. Add the chicken, panko, 2 tablespoons hoisin sauce, the ginger, 3 teaspoons soy sauce and 1 teaspoon sambal oelek and mix until combined. Shape the chicken mixture into 4 patties and place on the prepared baking sheet. Bake until cooked through, about 20 minutes. Meanwhile, thinly slice the remaining 1/2 onion. Toss with the mushrooms, sesame oil, lime juice and the remaining 1 teaspoon soy sauce in a bowl. Mix the remaining 2 tablespoons hoisin sauce and 2 teaspoons sambal oelek with 1 tablespoon water in another bowl. Warm the hamburger buns in the oven. ½ cup chopped green onions

1 1/2 cups coleslaw mix (from 16-oz bag)
1 medium green onion, chopped (1 tablespoon)
3 tablespoons Asian vinaigrette dressing
1 lb ground chicken
1/2 cup Progresso™ plain bread crumbs
1 tablespoon soy sauce
2 cloves garlic, finely chopped
2 teaspoons sesame oil
1/4 teaspoon freshly ground pepper
4 hamburger buns, split

Steps:

  • Heat gas or charcoal grill. In small bowl, toss coleslaw mix and onion with dressing; set aside.
  • In medium bowl, mix remaining ingredients except buns. Shape mixture into 4 patties, about 3/4 inch thick.
  • Carefully brush oil on grill rack. Place patties on grill over medium heat. Cover grill; cook 10 to 14 minutes, turning once, until thermometer inserted in center of patties reads 165°F. During last 2 minutes of grilling, place buns, cut sides down, on grill.
  • Place burgers on bun bottoms. Using slotted spoon, top each burger with about 1/3 cup coleslaw mixture. Cover with bun tops.

8 oz boneless, skinless chicken breast
1/4 c shredded carrots
1 green onion, minced - green tops too
1 clove garlic, minced
1 Tbsp soy sauce
1 tsp ginger paste
1 tsp sesame oil
1/2 Tbsp rice vinegar
salt & pepper
tomato slices, red cabbage shredded, cucumber sliced thin - these are just what i used, you can use whatever you prefer
toasted buns or i used toasted french bread
SAUCE
1 1/2 Tbsp sour cream
1 Tbsp mayonnaise
1/2 Tbsp soy sauce
1/4 tsp sriracha sauce or less if preferred
1/2 Tbsp brown sugar
1/4 tsp sesame oil
1/2 tsp dijon mustard

Steps:

  • 1. Make sauce : Whisk all sauce ingredients until smooth. Cover & refrigerate until ready to use.
  • 2. In a food processor, add chicken breast and pulse until chicken is ground. ( Or can buy already ground chicken. ) Place in a small bowl. Shred carrots, green onion and garlic in food processor. Add to chicken. Next, add the ginger, soy, sesame oil, ginger, vinegar and mix until well blended.
  • 3. The chicken burgers can either be grilled or broiled. If grilling you will need a grill pan as it is a loose mixture. Spray the grill pan, divide meat mixture in half, shape patties once on the pan. Salt and pepper. Place on rack over medium heat on grill and cook for 6 minutes, then flip to other side and cook another 6 minutes or until juices run clear.
  • 4. I broiled mine today. Spray broiler pan with non stick cooking spray and divide meat mixture in half and pat out meat mixture in the shape of a patty once on pan. Salt & pepper. Place rack in oven about 4 - 6 inches below heat. Cook for 6 - 8 minutes on one side and flip to the other and finish cooking until juices run clear.
  • 5. Butter your bread or bun and toast either on grill or in broiler - I toasted mine right beside the patties. Spread sauce on bottom and top pieces of bread or bun. Add desired condiments. Enjoy! So good!

1 lb chicken, fresh or grounded
2 sprig(s) green onions
2 Tbsp soy sauce
1 tsp sesame oil (or to taste)
garlic powder (to taste)
1 c panko bread crumbs
VEGETABLE TOPPING
1/4 c carrot, shredded
1/2 c onions, sliced
1 green bell pepper, sliced
1/4 c napa cabbage, shredded (or regular cabbage)
1 Tbsp chives, fresh
1 c bean sprouts, fresh
1 tsp rice vinegar (to taste)
ginger, ground (to taste)
garlic oil (to taste)
cayanne or black pepper (to taste)
cheese (optional)
SAUCE
1/2 c japanese mayonnaise (or mayonnaise or choice)
1 Tbsp sriracha sauce
garlic powder
cayanne pepper (optional: to taste)
6 to 8 buns (i live sandwich thins!)

Steps:

  • 1. In a food processor, grind the Burger Mix and refrigerate for up to 4 hours. (DO NOT FREEZE!) Burger Mix: 1. chicken 2. green onion 3. panko crumbs 4. soy sauce 5. sesame oil 6. ginger (to taste) 7. black pepper (to taste) 8. chives 9. garlic (to taste)
  • 2. Burger can be cooked on the grill, baked or sautéed.(Whatever is your preferance though sautéing is best.)
  • 3. In a sauté pan or wok, stir fry Vegetable Mix in garlic oil and strain excess juice. (Straining stops the vegetable from being soggy.) Vegetable Mix: 1. Onions 2. green bell peppers 3. carrots 4. bean sprouts 5. chives Seasoning: 1. soy sauce 2. rice vinegar 3. ginger, powdered or fresh (to taste) 4. cayenne or black pepper (to taste) 5. garlic, powder or fresh (to taste)
  • 4. OPTIONAL Sauce for burger: Japanese mayonnaise (regular mayonnaise can be used) Sriracha sauce garlic powder cayenne pepper (to taste) Mix in a small bowl, Mayonnaise, Sriracha sauce, garlic powder and cayenne pepper. Let rest in refrigerator for 4 hours, allowing mayonnaise to be infused with flavor.
  • 5. On Sandwich Thins (or Bun of your choice): Vegetable Mix Chicken Burger Sauce (optional) cheese (preference, optional)
