ASIAN CABBAGE SALAD WITH FRESH PEACHES AND WASABI PEAS

Asian Cabbage Salad With Fresh Peaches and Wasabi Peas image

From Jean Pare's Company's Coming series of cookbooks from Canada. I added and subtracted a few things here and there in this recipe. Golden syrup is difficult to find in the US. Substitute brown rice syrup, honey, agave nectar, etc.instead-bearing in mind that these substitutions will add their own unique flavor. Belgian endive can be substituted for the red cabbage or radichhio.

Tips:

  • Choose the right cabbage: Napa cabbage or Chinese cabbage is the best choice for this salad. It has a tender texture and mild flavor that pairs well with the other ingredients.
  • Wash the cabbage thoroughly: Cabbage can harbor dirt and bacteria, so it's important to wash it thoroughly before using. Rinse the cabbage leaves under cold water and pat them dry with a paper towel.
  • Use fresh, ripe peaches: Fresh peaches are the best choice for this salad. They should be ripe but not too soft. Avoid peaches that are bruised or have brown spots.
  • Toast the wasabi peas: Toasting the wasabi peas will bring out their flavor and make them more crunchy. Spread the peas in a single layer on a baking sheet and toast them in a preheated oven at 350 degrees Fahrenheit for 5-7 minutes, or until they are golden brown.
  • Make the dressing ahead of time: The dressing for this salad can be made ahead of time and stored in the refrigerator for up to 2 weeks. This will save you time when you're ready to assemble the salad.
