Yield Makes 4 servngs

Number Of Ingredients 12

1/4 lb bean-thread noodles (also known as cellophane noodles)
4 garlic cloves, minced
1/3 cup soy sauce
2 tablespoons sugar
1 tablespoon Asian sesame oil
1 teaspoon dried hot red pepper flakes
1/2 cup plus 1 teaspoon rice vinegar (not seasoned)
1 lb filet mignon, cut into 1/4-inch-thick julienne strips
2 (14 1/2-oz) cans beef broth
1/4 cup water
1 Asian pear, cut into julienne strips
2 scallions (green parts only), thinly sliced

Steps:

  • Soak noodles in a bowl of cold water until pliable, about 15 minutes, and drain. Cut into 2-inch lengths. While noodles are soaking, stir together garlic, soy sauce, sugar, sesame oil, red pepper flakes, and 1/2 cup vinegar. Add beef and marinate at room temperature, stirring occasionally, 15 minutes. Bring broth and water to a boil. Add beef and marinade and cook 2 minutes. Stir in noodles and cook until just tender, about 2 minutes.
  • Toss pear and scallions with remaining teaspoon vinegar. Spoon noodles and broth into bowls and top with pear and scallions.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make your dish shine. Look for tender cuts of beef, crisp vegetables, and flavorful sauces.
  • Marinate the beef: Marinating the beef in a flavorful mixture of soy sauce, rice wine, and spices helps tenderize the meat and infuse it with flavor.
  • Cook the beef in small batches: Do not overcrowd the pan when cooking the beef. This will help prevent the meat from steaming instead of searing.
  • Use a hot pan: A hot pan will help sear the beef and create a nice caramelized crust.
  • Cook the noodles according to the package directions: Different types of noodles have different cooking times. Be sure to follow the instructions on the package to ensure that the noodles are cooked properly.
  • Add the vegetables towards the end of cooking: This will help prevent them from becoming overcooked and mushy.
  • Season the dish to taste: Add salt, pepper, and other seasonings to taste. You may also want to add a squeeze of lime juice or a dash of chili sauce for extra flavor.

Conclusion:

This Asian beef and noodles recipe is a quick, easy, and delicious meal that is perfect for a weeknight dinner. The beef is tender and flavorful, the noodles are perfectly cooked, and the vegetables are crisp and colorful. This dish is sure to be a hit with your family and friends.
