Time 4h40m

Yield 4

Number Of Ingredients 9

⅓ cup soy sauce
⅓ cup brown sugar
2 tablespoons lime juice
2 tablespoons orange juice
1 tablespoon Thai-style sweet chili sauce
1 teaspoon chile-garlic sauce (such as Sriracha®)
3 cloves garlic, minced
¼ teaspoon curry powder
4 skinless, boneless chicken thighs

Steps:

  • Place the soy sauce, brown sugar, lime juice, orange juice, sweet chili sauce, chili-garlic sauce, garlic, and curry powder in a large plastic zipper bag. Seal and knead the bag with your fingers to mix all the ingredients and dissolve the sugar. Place the chicken thighs into the marinade, squeeze out the air from the bag, zip the bag closed, and refrigerate for 4 hours or overnight.
  • Preheat an outdoor grill for medium-low heat; lightly oil the grate.
  • Remove the chicken from the bag, pour the excess marinade into a small saucepan, and bring to a full boil for about 1 minute to sterilize the marinade.
  • Grill the chicken thighs until they are no longer pink in the middle and show grill marks, about 25 minutes, basting them generously with the sterilized marinade as they grill.

Time 1h40m

Yield 4

Number Of Ingredients 9

½ cup rice vinegar
5 tablespoons honey
⅓ cup soy sauce (such as Silver Swan®)
¼ cup Asian (toasted) sesame oil
3 tablespoons Asian chili garlic sauce
3 tablespoons minced garlic
salt to taste
8 skinless, boneless chicken thighs
1 tablespoon chopped green onion

Steps:

  • Whisk the vinegar, honey, soy sauce, toasted sesame oil, chili garlic sauce, garlic, and salt in a bowl until smooth. Pour half the marinade into a large plastic zipper bag; retain the other half of the sauce. Place the chicken thighs into the bag containing marinade, squeeze all the air out of the bag, and seal. Shake a few times to coat chicken; refrigerate for 1 hour, turning bag once or twice.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Pour the other half of the marinade into a saucepan over medium heat, bring to a boil, and cook for 3 to 5 minutes, stirring often, to thicken sauce. Remove the chicken from the bag; discard used marinade. Place chicken thighs into a 9x13-inch baking dish, and brush with 1/3 of the thickened marinade from the saucepan.
  • Bake 30 minutes, basting one more time after 10 minutes; an instant-read thermometer inserted into a chicken thigh should read 165 degrees F (75 degrees C). Let stand for 5 or 10 minutes; meanwhile, bring remaining marinade back to a boil for 1 or 2 minutes, and serve chicken with marinade. Sprinkle with green onions.

Tips:

  • Choose the right chicken thighs: Look for bone-in, skin-on chicken thighs for the best flavor and texture. You can also use boneless, skinless chicken thighs, but they will be less juicy.
  • Make sure the chicken is fully cooked: The internal temperature of the chicken should reach 165°F (74°C) before you remove it from the grill. You can check the temperature with a meat thermometer.
  • Let the chicken rest before serving: This will allow the juices to redistribute throughout the meat, making it more tender and flavorful.
  • Use a flavorful marinade or sauce: The marinade or sauce will help to infuse the chicken with flavor. You can use a store-bought marinade or sauce, or you can make your own. There are many different recipes available online.
  • Grill the chicken over medium heat: This will help to prevent the chicken from burning. You can also cook the chicken in a preheated oven at 375°F (190°C) for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
  • Serve the chicken with your favorite sides: Some popular sides for Asian barbecue chicken thighs include rice, noodles, vegetables, and salad.

Conclusion:

Asian barbecue chicken thighs are a delicious and easy-to-make dish that is perfect for a summer cookout or potluck. With a flavorful marinade or sauce, and a few simple ingredients, you can create a dish that will impress your family and friends. So next time you're looking for a new way to cook chicken, give this recipe a try. You won't be disappointed!
