This recipe was adapted from the "Just Add Water" cookbook by Lauren Chattman. I love risotto but really don't like the clean up! This recipe is foolproof and tastes amazing. My husband and I have already started dreaming up new combinations for this quick and easy dinner. Enjoy!

1/4 cup olive oil
1 teaspoon sea salt
1/4 teaspoon red pepper flakes
1/4 teaspoon dried rosemary
1/2 teaspoon oregano
1/4 teaspoon lemon pepper
2 large boneless skinless chicken breasts
3 quarts water
1 1/2 cups arborio rice, also known as risotto
1 teaspoon salt
1 cup mozzarella cheese, shredded
1/4 cup parmesan cheese, shredded
1 tablespoon unsalted butter
2 cups baby arugula
1 cup mushroom, sliced
1 tablespoon olive oil
black pepper

Steps:

  • Combine all ingredients for the the marinade in a bowl. Add chicken. Pierce with fork and thoroughly cover the chicken. Cover and set aside for at least 30 minutes.
  • Bring the water to a boil in a large sauce pan. Add the rice and salt. Bring back to boil and continue to boil, stirring occasionally, until the rice in tender, 15-17 minutes.
  • In a small frying pan, heat up olive oil. Saute mushrooms until tender and set aside.
  • Grill the chicken.
  • Drain the rice in a colander and put back into the hot pot. Stir in the cheeses, butter, arugula, and mushrooms.
  • Slice the chicken breasts diagonally in half to make four pieces.
  • Immediately divide the risotto among four plates and place the chicken on top of the risotto.
  • Add black pepper to taste.

1 cup all-purpose flour
Kosher salt and freshly ground black pepper
2 extra-large eggs
1 1/2 cups seasoned dry bread crumbs
1/2 cup freshly grated Parmesan cheese
1 teaspoon lemon zest
1 teaspoon fresh thyme leaves, chopped
6 boneless, skinless chicken breasts
Unsalted butter
Good olive oil
5 ounces arugula
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 pound chunk Parmesan cheese

Steps:

  • Combine the flour, 1 teaspoon salt, and 1/2 teaspoon pepper on a dinner plate. On a second plate, beat the eggs with 1 tablespoon of water. On a third plate, combine the bread crumbs, the 1/2 cup grated Parmesan cheese, the lemon zest and thyme, and set aside.
  • Pound the chicken breasts between two sheets of parchment paper until they are 1/4 inch thick. You can use either a meat mallet or a rolling pin.
  • Coat the chicken breasts on both sides with the prepared flour mixture, then dip both sides into the egg mixture and dredge both sides in the bread-crumb mixture, pressing lightly.
  • Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large sauté pan and cook 2 or 3 chicken breasts on medium-low heat for 2 to 3 minutes on each side, until cooked through. Add more butter and oil and cook the rest of the chicken breasts.
  • Place the arugula in a large bowl. In a 1-cup glass measure, whisk together the 1/4 cup lemon juice, 1/2 cup olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Pour enough dressing on the arugula to moisten. Toss well.
  • Pile some arugula on top of each hot chicken breast. With a very sharp knife or a vegetable peeler, shave the chunk of Parmesan into large shards and arrange them on top of the arugula.

2 tablespoons butter
1/3 cup finely chopped onion
1 pound Arborio rice, available in specialty food shops, about 2 1/3 cups

1/3 pound smoked mozzarella cheese, cut into small cubes, about 1 1/2 cups

  • Prepare the escarole and set it aside.

2 cups (packed) whole arugula leaves plus 1/2 cup sliced (about 3 large bunches total)
1/2 cup (packed) fresh parsley leaves
4 garlic cloves, peeled
6 tablespoons olive oil
2 teaspoons grated lemon peel
3 cups canned low-salt chicken broth
3 cups bottled clam juice
2 tablespoons (1/4 stick) butter
3/4 cup chopped onion
2 cups arborio rice or medium-grain white rice
1/2 cup dry white wine
1 1/2 pounds uncooked medium shrimp, peeled, deveined

Steps:

  • Combine 2 cups whole arugula leaves, parsley and garlic in processor. Blend until coarsely chopped. With machine running, add 4 tablespoons oil; process until finely chopped. Mix in lemon peel. Season to taste with salt and pepper.
  • Bring broth and clam juice to simmer in large saucepan. Cover and keep warm over low heat. Melt butter with remaining 2 tablespoons oil in heavy large pot over medium heat. Add onion and saut until tender, about 5 minutes. Add rice and stir 2 minutes. Add wine and stir until absorbed, about 1 minute. Stir in 1 cup warm broth and simmer until absorbed, stirring frequently. Cook until rice is almost tender, adding broth 1/2 cup at a time, stirring often and allowing each addition to be absorbed before adding next, about 20 minutes. Mix in arugula mixture and shrimp. Continue cooking, adding more broth 1/4 cup at a time, until rice is creamy and tender and shrimp are cooked through, about 10 minutes longer. Season risotto with salt and pepper. Transfer to bowl. Sprinkle with 1/2 cup sliced arugula and serve.

1/4 cup olive oil
2 tablespoons butter
2 shallots, finely chopped
1 1/2 cups risotto rice (vialone, arborio or carnaroli)
1/2 cup vermouth or 1/2 cup dry white wine
12 large tiger shrimp, in the shell split down the centre

  • Pour the stock into a saucepan and place over medium heat, bring to a boil then reduce to a simmer.
  • In another saucepan, heat half the oil and all the butter. Add the shallots and cook gently for 5 minutes, then add the rice and stir until well coated. Pour in the vermouth and stir until absorbed by the rice.
  • Add a ladleful of hot stock, keep stirring the simmering rice until the liquid is almost completely absorbed. Now add another ladleful of stock and continue cooking, adding more stock only when the previous liquid has been completely absorbed.
  • After 15 to 20 minutes, the rice will be creamy and cooked but still slightly al dente. Preheat the broiler and place the shrimp on a baking sheet, shell-side down.
