CINDY'S ARTICHOKE AND SPINACH BALLS
I love keeping frozen vegetables handy in the refrigerator. We were invited to a friend's house and came up with these to bring. I had all of the ingredients. Enjoy! I made these, packed them up, and they vanished. I totally forgot to take a photo of the finished balls. Next time!

CRISPY DEEP FRIED SPINACH & ARTICHOKE DIP BALLS
My girlfriend and I were at T.G.I. Fridays last week, and as we were eating chips w/ spinach and artichoke dip, and we started talking about how good it would be in deep friend little balls. We thought that surely it had been done before, but as we searched online (Food Network,Google, etc), we couldn't find any reference to it, and couldn't find a recipe. Well, we decided to make our own!

Steps:
- If you've made Spinach & Artichoke Dip before, you will notice that this recipe is much thicker. If the finished product isn't thick enough to roll into balls, add alittle more Parm Cheese, or refrigerate to tighten/thicken the mix.
- Preheat your Fry Daddy! Roll the balls into the size you would like, and place on a sheet, and place in the freezer for 20 - 30 mins (this will tighten/solidify the balls into something that can be more successfully breaded.
- One at a time, cover each ball with flour (bowl #1), then into the egg until its totally covered (bowl #2), and finally into the breadcrumbs until covered (bowl #3). Drop into the hot oil and fry for 5 - 6 minutes. Enjoy!

Steps:
- Chop hearts until fine. Mix all ingredients together. Roll into 1/2 in. balls. Bake in 350 degree oven until brown.
Tips:
- Choose fresh artichokes: Look for artichokes that are heavy for their size, have tightly closed leaves, and a vibrant green color.
- Trim the artichokes properly: Cut off the stem and the top inch of the artichoke. Remove the tough outer leaves until you reach the tender, light-colored leaves.
- Cook the artichokes until tender: You can boil, steam, or pressure cook the artichokes until they are tender enough to easily remove the choke. Boiling typically takes around 20-25 minutes, steaming takes about 15-20 minutes, and pressure cooking takes about 5-7 minutes.
- Handle the artichoke hearts carefully: Once the artichokes are cooked, let them cool slightly before handling. Use a spoon or fork to gently scrape out the choke, which is the fuzzy center of the artichoke.
- Use a food processor for efficiency: If you're making a large batch of artichoke balls, use a food processor to quickly and easily chop the artichokes, bread crumbs, and other ingredients.
- Season the artichoke balls well: Don't be afraid to add plenty of herbs, spices, and cheese to the artichoke ball mixture. This will give them a delicious and flavorful taste.
- Cook the artichoke balls until golden brown: Fry the artichoke balls in hot oil until they are golden brown and crispy on the outside. This will ensure that they are cooked through and have a delightful texture.
- Serve the artichoke balls with your favorite dipping sauce: Artichoke balls are typically served with a dipping sauce, such as marinara sauce, ranch dressing, or tzatziki sauce.
Conclusion:
Artichoke balls are a versatile and delicious appetizer or snack that can be enjoyed by people of all ages. They are easy to make and can be customized to your own taste preferences. Whether you prefer them simple or loaded with cheese and herbs, artichoke balls are sure to be a hit at your next party or gathering. So next time you're looking for a tasty and impressive appetizer, give artichoke balls a try. You won't be disappointed!
