ARROZ PILAF

When we cook Tex-Mex this recipe from Cheryl and Bill Jamison is the one we use. It is a fantastic side dish that has it's own wonderful flavor - one that complements and doesn't compete with grilled meats, burritos, stews, tacos....whatever we serve.

Time 25m

Number Of Ingredients 8

2 tbsp. peanut oil or lard
2 garlic cloves, minced
1 medium onion, chopped fine
1 cup uncooked rice
2 small tomatoes, preferably roma or another italian plum variety, chopped
2 tsp. chili powder, such as gebhardt's
2 cups unsalted beef or chicken stock
3/4 tsp. salt

Steps:

  • 1. In medium pan, heat peanut oil or lard. Sauté garlic and onion over medium heat til softened. Add rice, tomatoes, and chili powder, and sauté another couple of minutes, stirring to coat all grains of rice with oil. Pour in stock, sprinkle in salt and bring to boil. Reduce heat, cover and simmer rice for 15 to 18 minutes til all liquid is absorbed
  • 2. Remove pan from heat and let rice steam, covered, for 5 to 10 minutes. Serve at once. Serves 4 to 6

Tips:

  • For the best results, use long-grain rice such as basmati or jasmine rice.
  • Rinse the rice thoroughly before cooking to remove any starch and impurities.
  • Use a heavy-bottomed pot or pan to cook the rice. This will help to distribute the heat evenly and prevent the rice from burning.
  • Be sure to measure the rice and water carefully. The ratio of rice to water is important for achieving the perfect texture.
  • Do not stir the rice while it is cooking. Stirring can break up the rice grains and make them mushy.
  • Once the rice is cooked, fluff it with a fork before serving. This will help to separate the grains and make the rice light and fluffy.

Conclusion:

Arroz pilaf is a delicious and versatile dish that can be served as a main course or a side dish. It is a great way to use up leftover rice, and it can also be made ahead of time and reheated later. With so many different variations, there is sure to be an arroz pilaf recipe that everyone will enjoy.
