1/3 cup canola oil

1 cup long-grain white rice
One 4-inch cinnamon stick
One 12-ounce can evaporated milk
One 14-ounce can condensed milk
1 cup whole milk
3/4 cup golden raisins
Ground cinnamon, for dusting

Steps:

  • Put the water, rice, and cinnamon stick in a medium-size heavy saucepan set over medium-high heat. Bring to a boil, uncovered, and cook until the rice is tender, about 18 minutes. Strain out the liquid, discard the cinnamon and reserve the rice. Return the rice to the saucepan. Stir in the evaporated milk, condensed milk, and whole milk. 2 cups long-grain white rice
8 cups whole milk
3/4 cup granulated sugar
1 (12-ounce) can evaporated milk
1 fresh vanilla bean, split
2 small cinnamon sticks
Ground cinnamon, for topping

Steps:

  • Fill a medium pot halfway with water and bring to a boil. Remove from heat and add rice. Set aside 20 minutes.
  • Meanwhile, combine whole milk, sugar, evaporated milk, vanilla bean and cinnamon sticks in a large heavy-bottomed pot (at least 4 quarts) and set over medium heat. Cook, stirring occasionally, 40 minutes. If mixture starts to boil, reduce heat so it is just barely simmering.
  • While milk mixture cooks, drain the rice, rinse it and set it aside. Fill the medium pot halfway with fresh water and bring to a boil. Add drained rice to the boiling water, turn down heat, and simmer 6 minutes. Drain rice again.

½ cup water
1 cinnamon stick
