PUERTO RICAN ARROZ CON LECHE (RICE WITH MILK)
In Puerto Rico this recipe is simply a rice soup made with milk. Usually made for babies, children, or when someone has a bad stomach. It is a comfort food. In other Latin American countries 'Arroz con leche' might be a dessert made with sugar and cinnamon. Our rice dessert is called Arroz con dulce, made with coconut.

RICE PUDDING -- MEXICAN STYLE, ARROZ CON LECHE
This arroz con leche recipe comes from a calender cookbook called Mexico, The Beautiful Cookbook. My Mother-in-law was about to throw it out and I found this wonderful rice pudding recipe in it. It is by far the best I have ever tasted. I omit the the lime and orange peel but I am sure it's probably great with it. uuum, uuum good. *I have made no changes to the recipe but want to make a note that many Food.com users state a frustration with the stirring time so feel free to turn the heat up a little but I posted the recipe exactly as it was on the calendar. I apologize to anyone that has been frustrated. The end result is always wonderful though : ) THANKS for all the wonderful reviews, it is very much appreciated. Enjoy!!!

Steps:
- In a large pot add sazon, oil, sofrito, onion powder, garlic powder, adobo, ham, gandules, coconut milk, and tomato sauce. Simmer over medium fire. Stir ingredients together and let heat up for about 3 minutes. Add water continue to mix all ingredients together.Add salt to taste. Let it simmer until it comes to a boil. When water is boiling add rice. Stir in the rice so it all evens out with taste. Cover the pot. When you see all the water has dried stir rice so it all cooks evenly. Covering the the rice allows it to cook but also helps to keep it nice and moist not dry and hard. (if rice seems a bit hard just sprinkle a bit a water on top and cover) at times this will happen if it's your first time making rice.
RICE PUDDING WITH RAISINS AND CINNAMON (ARROZ CON LECHE)
Yes, it's a bit time consuming . . . but worth every minute of it! Even though the recipe calls for vanilla beans, I've successfully substitued 1 tablespoon of vanilla. Found this recipe while cleaning out my old recipe box. Comes from May 2003 Bon Appetit. NOTE: The rice will seem soupy at first, but don't panic it will set up as it chills.

Tips
1. Choose the right type of rice. - Use short-grain rice, such as Spanish bomba rice or Arborio rice. They are starchy and have a high absorption capacity, making them ideal for arroz con leche. - If you can't find short-grain rice, medium-grain rice can also be used. 2. Rinse the rice thoroughly. - Rinsing the rice removes the starch and impurities, which prevents the rice from becoming gummy. - Rinse the rice under cold water until the water runs clear. 3. Use whole milk or a combination of whole milk and water. - Whole milk will make the arroz con leche richer and creamier. - If you are using a combination of milk and water, use 2 parts milk to 1 part water. 4. Add sugar and spices to taste. - The amount of sugar and spices you add will depend on your personal preferences. - A good starting point is to add 1/2 cup of sugar and 1 teaspoon of ground cinnamon. - You can also add other spices, such as nutmeg, cloves, or ginger. 5. Cook the arroz con leche over medium heat. - This will prevent the rice from sticking to the bottom of the pot and burning. - Stir the rice frequently to ensure that it cooks evenly. 6. Let the arroz con leche simmer for at least 30 minutes. - This will allow the rice to absorb the milk and spices and become tender. - If the arroz con leche becomes too thick, you can add a little more milk or water. 7. Serve the arroz con leche warm or cold. - Arroz con leche can be served warm or cold. - If you are serving it warm, sprinkle some ground cinnamon on top. - If you are serving it cold, chill it for at least 2 hours before serving. Conclusion
Arroz con leche is a delicious and versatile dessert that can be enjoyed by people of all ages. It is easy to make and can be customized to your own taste. Whether you like it warm or cold, with or without spices, arroz con leche is sure to be a hit. So next time you are looking for a sweet treat, give arroz con leche a try.
