BEEF KAFTA

Beef Kafta image

This is a Lebanese style Beef Kafta recipe that's made with ground beef, parsley, onions and a blend of Middle Eastern spices- perfect on the grill or stove

Provided by Yumna Jawad

Categories     Main Course

Time 30m

Number Of Ingredients 10

¼ cup parsley
1 small yellow onion (quartered)
1 pound ground beef
2 teaspoons 7 spice
½ teaspoon cumin
½ teaspoon cinnamon
½ teaspoon coriander
⅛ teaspoon cayenne pepper
½ teaspoon salt
¼ teaspoon black pepper (to taste)

Steps:

  • Place the parsley in the bowl of a food processor and pulse until finely chopped, remove and set aside.
  • In the same food processor bowl used to chop the parsley, place the quartered onion and pulse until finely chopped. Drain the onions slightly to release excess moisture.
  • Return the parsley back to the bowl of the food processor with the onions. Add the ground beef to the food processor in addition to all the spices. Run the food processor on pulse once or twice until ingredients are well combined and form a pasty meat mixture.
  • Transfer the mixture from the food processor to a large bowl and form the Kafta into an oblong shape about 1 inch in thickness. You can form them on a wooden skewer or without.
  • Grease the grates of a gas grill or indoor grill pan, and preheat it to medium high heat. When heated through, transfer the kafta to the grill. Grill for 4-5 minutes per side, depending on your preferred level of doneness.
  • Serve hot off the grill with your choice of side.

AROMATIC BEEF KOFTI

Aromatic Beef Kofti image

From Cardamom & Coriander by Simon Morris. Another yummy bit from my new love of Indian food and ZWT6. Little appetizer Indian burger patties which are best eaten grilled outside. Another recipe I read suggested to have the beef ground three times to improve the mouth feel of the patties. Seems like a great idea to me. Ask your butcher.

Time 30m

Yield 12 patties, 6 serving(s)

Number Of Ingredients 11

2 lbs lean ground beef
1 large onion, chopped fine
2 garlic cloves, minced
1 green chili pepper, seeded and chopped
2 teaspoons prepared mustard (use a good one)
1 tablespoon garam masala
1 teaspoon salt
2 eggs, beaten
1 tablespoon cilantro, chopped
1 tablespoon dry methi leaves
2 tablespoons oil (for cooking)

Steps:

  • Mix beef with onion, garlic and chili. Add mustard, garam masala, salt and eggs. Mix until thouroughly blended and bound together. Add the coriander and methi. mix just to combine.
  • Divide mixture in half and divide each half into 12 equal portions. Shape into small patties.
  • Brush lightly with oil and grill about 2-3 minutes on each side or until browned and cooked through.
  • Alternately put a small amount of oil in a frying pan and cook until browned.

Tips:

  • Choose high-quality beef. Look for ground beef that is at least 80% lean. This will help to ensure that the kofta is juicy and flavorful.
  • Soak the bread in milk. This will help to bind the ingredients together and make the kofta more tender.
  • Use a variety of spices. The spices in this recipe are essential for giving the kofta its unique flavor. Don't be afraid to experiment with different combinations of spices to find your favorite.
  • Be careful not to overcook the kofta. Overcooked kofta will be dry and tough. Cook them for just until they are cooked through, about 10 minutes.
  • Serve the kofta with your favorite dipping sauce. A yogurt sauce or a tahini sauce are both great options.

Conclusion:

Aromatic beef kofta is a delicious and easy-to-make dish that is perfect for any occasion. Whether you are serving it as an appetizer, a main course, or a snack, your friends and family are sure to enjoy it. So next time you are looking for a new and exciting recipe to try, give aromatic beef kofta a try. You won't be disappointed.
