Time 3h25m

Yield 4 servings

Number Of Ingredients 11

2 pounds lamb (shank, leg, shoulder roast, top roast, etc.)
Olive oil, for drizzling
1 tablespoon salt
2 tablespoons ground black pepper
1 large onion, diced
3 cloves garlic, minced
2 tablespoons tomato paste
3/4 cup diced tomatoes
3 cups broth or water
8 ounces orzo
Myzithra cheese, feta, Parmesan or good Romano, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Rub the lamb with olive oil and sprinkle very liberally with salt and pepper. Sear the lamb in a heavy bottomed skillet. Transfer to a casserole dish.
  • Add a little olive oil to the skillet, then add the onions. Cook until tender, then stir in the garlic and tomato paste and cook until they start to become incorporated with the onions. Add the diced tomatoes and broth and bring to a boil; season to taste with salt and pepper. Add the liquid to the lamb casserole. Cover it and bake until the lamb is very tender, about 2 hours 30 minutes.
  • Add the orzo and stir. Add some hot water if it starts to look dry and continue to bake, uncovered, until the orzo is cooked, 20 to 30 minutes.
  • Serve pieces of the lamb alongside the orzo and top generously with your choice of cheese.

Categories     main-dish

Time 4h30m

Yield 8 servings

Number Of Ingredients 9

1 leg of lamb or goat
8 small sprigs rosemary
3 cloves garlic, sliced thinly
1/4 cup olive oil
1 tablespoon dry oregano, chopped fine
1 lemon, juiced
2 teaspoons salt
1 teaspoon black pepper
1 tablespoon fresh oregano, chopped fine

Steps:

  • Preheat the oven to 500 degrees F.
  • Make sure the lamb is cleaned well and any hard fat is trimmed off. Make 8 slits in the leg and stuff them with the rosemary sprigs and garlic cloves. Rub the leg with the olive oil, dry oregano, lemon, salt, and pepper. Roast for about 30 minutes.
  • Lower the heat to 375 degrees F. Add water to the pan, if needed. Cook for about 3 1/2 hours. Remove from the pan and let rest. Skim the fat from the pan juices and pour into a bowl with the fresh oregano.

Tips:

  • Choose the right cut of lamb: A leg of lamb is the best cut for this recipe, as it is a large, meaty cut that will cook evenly. You can also use a shoulder of lamb, but it will take longer to cook.
  • Marinate the lamb overnight: This will help to tenderize the meat and infuse it with flavor. You can use a variety of marinades, but a simple mixture of olive oil, garlic, rosemary, and lemon juice is a good option.
  • Roast the lamb at a high temperature: This will help to create a crispy crust on the outside of the meat while keeping the inside juicy and tender. Roast the lamb for about 15 minutes per pound, or until it reaches an internal temperature of 145 degrees Fahrenheit.
  • Let the lamb rest before carving: This will allow the juices to redistribute throughout the meat, making it more tender and flavorful. Let the lamb rest for at least 10 minutes before carving.
  • Serve the lamb with a variety of sides: Roasted vegetables, mashed potatoes, and a green salad are all good options.

Conclusion:

Arni psito is a delicious and impressive dish that is perfect for a special occasion. With its tender meat, crispy crust, and flavorful marinade, this dish is sure to be a hit with your family and friends.
