Time 1h

Yield one 9-to-10-inch/23 to 25 cm cake

Number Of Ingredients 9

6 eggs
3/4 cup/155 g sugar
Zest of 3 oranges
1 1/2 cups/200 g almonds, ground
Juice of 3 oranges
1/2 cup/95 g sugar
A glug of orange liqueur, such as Grand Marnier, optional
Candied orange zest, for serving
Whipped cream, for serving

Steps:

  • Preheat the oven to 350 degrees F/180 degrees C. Grease and line a 9-to-10-inch/23 to 25 cm cake pan (springform or tube pan).
  • For the cake: Separate the eggs into two bowls. Beat the yolks with the sugar and zest, then stir in the almonds. Beat the whites to peaks. Stir a spoonful of whites into the yolk mixture, then fold in the rest, gently. Pour the batter into the pan and bake until set, about 45 minutes. Let cool slightly, then unmold onto a serving platter.
  • For the syrup: Heat the orange juice and sugar together in a saucepan and boil for 5 minutes. Stir in the liqueur if using. Spoon the syrup evenly over the cake, letting the syrup soak in as you go (it will absorb all of it).
  • Serve the cake with candied orange zest on top and whipped cream on the side.

ARMENIAN ORANGE CAKE

We were invited for dinner at a friend's house and she served us this wonderful cake for dessert. I found this recipe at Cooks.com and Chow Times.com. I have yet to try making it myself to see if it works. Will probably add a review if it turns out great.

Armenia is famous for its sweet and spicy nutmeg cake. It has a crunchy base and light cake topping, and tastes delicious. This recipe was given to me 16 years ago by the mother of one of my son's kindergarten friends. Tried and true!

Tips:

  • Use fresh oranges: Fresh oranges provide the best flavor for this cake. If you can, use organic oranges to avoid any pesticides or chemicals.
  • Zest the oranges before juicing them: This will help to release the essential oils from the oranges and give the cake a more intense flavor.
  • Use a light hand when mixing the batter: Overmixing the batter can make the cake tough. Mix just until the ingredients are combined.
  • Bake the cake in a preheated oven: This helps to ensure that the cake rises evenly.
  • Let the cake cool completely before frosting it: This will help to prevent the frosting from melting.

Conclusion:

Armenian orange cake is a delicious and easy-to-make cake that is perfect for any occasion. With its moist texture, sweet orange flavor, and fluffy frosting, this cake is sure to be a hit. So next time you're looking for a simple yet delicious cake recipe, give Armenian orange cake a try.
