1/2 cup butter, softened ((1 stick))
4 ounces cream cheese, room temperature
1 cup granulated white sugar
1 egg
1 teaspoon vanilla extract
1 teaspoon almond extract
1/2 teaspoon baking powder
1 3/4 cup cake flour

Steps:

  • Line baking sheet with parchment paper. Cream together butter and cream cheese with electric mixer.
  • Add sugar and beat for 1 minute. Add egg and beat to combine. Add extracts and beat until combined. Add in baking powder and cake flour (in three sections), mixing to combine.

1/2 teaspoon baking soda
1/2 teaspoon kosher salt
6 tablespoons/85 grams unsalted butter (3/4 stick), at room temperature
4 ounces/105 grams cream cheese, at room temperature
1 cup/200 grams granulated sugar
1 lemon, zested and juiced (about 4 teaspoons zest and 2 tablespoons juice)
1 large egg
3 tablespoons confectioners' sugar
1 1/2 tablespoons milk, plus more, as needed

  • Heat the oven to 350 degrees. In a medium bowl, whisk together the flour, baking soda and salt. ARKANSAS: Munch your way across the USA. Years ago our church gave each of us, who submitted recipes to the church cookbook, a cookie recipe book called "Capitol Cookies". This book has cookie recipes to represent each US state, as well as Washington, DC. This paticular recipe is by the Henderson United Methodist Women in Little Rock, Arkansas, Marjorie Christian, Chairperson. I have only tried a few of these recipes and this is one I made on 2/13/11. They are very good and my husband says it's a keeper.

2 stick(s) butter, room temperature
8 ounce(s) cream cheese, room temperature
1 cup(s) granulated sugar
2 cup(s) all purpose flour
3/4 cup(s) chopped nuts (optional)
1/2 teaspoon(s) vanilla extract
- dash of salt

Steps:

  • Cream butter, cream cheese and sugar together. Stir in flour, salt, nuts and vanilla and combine well. The dough will be stiff and a bit sticky until chilled.
  • Roll up (log style) making three (3) logs. Wrap each log roll in plastic wrap or foil if freezing. If cooking the next day, just wrap logs in plastic wrap or wax paper then wrap a damp cloth around logs and place in fridge overnight. This is a very important step.
  • Preheat oven to 350. Line cookie sheet with aluminum foil and spray with Pam. Remove dough from cloth & wrap, slice thin and place onto cookie sheet 2" apart. Bake on 350 for approximately 13-15 minutes.
  • NOTE: I also froze one of the log rolls and they do great this way, too.
