4 medium to large Idaho potatoes
1/4 cup cider vinegar
1 tablespoon extra-virgin olive oil
4 slices smoky bacon, chopped
1 tablespoon granulated sugar
Kosher salt and freshly ground black pepper
1/4 cup finely chopped fresh flat-leaf parsley

Steps:

  • Preheat oven to 500 degrees F.
  • Parboil potatoes for 4 minutes in a large pot over medium heat, or pierce with fork and microwave for 6 minutes. When ready, cut into 8 wedges each and sprinkle with vinegar.
  • In large skillet, heat the extra-virgin olive oil over medium-high heat, add the bacon and cook until crisp. Remove with a slotted spoon to paper towels and reserve. Toss potatoes in the bacon drippings and season with sugar, and salt and pepper. Scatter onto a baking sheet and roast, in the preheated oven, until golden and crisp, about 20 minutes. 1 lb russet potatoes, peeled, rinsed and dried
3+4 c vegetable oil, for frying
1 c fresh parsley, chopped
2/3 c garlic, minced
olive oil
sea salt

Steps:

  • 1. Cut the potatoes into sticks 1/4 inch wide and about 3 inches long. Dry with paper towels.
  • 2. Heat oil in saucepan to 350 degrees F. Fry the potatoes in batches until lightly colored but not brown, about 4 to 5 minutes. Remove to a plate lined with paper towels. Repeat with remaining potatoes.
  • 3. Into a large bowl, put the parsley and garlic. Transfer to a jar and cover with olive oil.
  • 4. Increase oil temperature to 375 degrees F. Fry the potatoes in batches until they are golden brown and crisp, 1 to 2 minutes. Drain on fresh paper towels. Sprinkle with salt and toss with some parsley-garlic mixture. Toss and serve immediately.
