Number Of Ingredients 6

4 teaspoons unsalted butter, room temperature, plus more for baking dishes
6 teaspoons sugar
8 fresh fig leaves, tough stems removed
4 medium apricots, halved and pitted
Zest of 1/2 lemon
Vanilla ice cream, for serving

  • Preheat oven to 400 degrees. Lightly butter two medium baking dishes. Sprinkle each dish with 1/2 teaspoon sugar; set aside.

Categories     Food & Cooking     Healthy Recipes     Gluten-Free Recipes

Time 40m

Number Of Ingredients 8

1 piece (2 inches) peeled fresh ginger, thinly sliced
1/4 teaspoon fennel seeds
3 green cardamom pods, crushed with the flat side of a large knife, seeds reserved and pods discarded
2 tea bags, English breakfast or other black tea
6 ounces (about 1 cup) dried apricots, halved
2 ounces (about 1/3 cup) dried black figs, stemmed and quartered
1/4 cup sugar
Plain whole-milk yogurt, preferably Greek, for serving

Steps:

  • Bring 2 cups water, the ginger, fennel seeds, and cardamom seeds to a boil in a small saucepan. Add tea bags; remove from heat. Let stand 3 minutes. Remove bags with a slotted spoon and discard.
  • Add apricots, figs, and sugar to tea mixture in pan. Return to a boil. Reduce heat; simmer, partially covered, until fruits are tender and liquid is reduced to a thick syrup, 20 to 25 minutes. Compote can be served warm or at room temperature. Serve yogurt on the side, with a little of the syrup drizzled on top.

Tips:

  • Select ripe, firm apricots: Choose apricots that are slightly soft to the touch and have a deep orange color. Avoid apricots that are too hard or have bruises or blemishes.
  • Prepare the fig leaves: If using fresh fig leaves, wash them thoroughly and pat them dry. If using dried fig leaves, soak them in warm water for about 30 minutes to soften them.
  • Stuff the apricots: Use a small spoon or your fingers to stuff the apricots with the honey, cinnamon, and nuts. You can also add a small piece of butter to each apricot for extra flavor.
  • Wrap the apricots in fig leaves: Place each stuffed apricot in a fig leaf and fold the leaf around it to enclose it completely. Secure the leaf with a toothpick or a piece of kitchen twine.
  • Bake the apricots: Place the wrapped apricots in a baking dish and bake them in a preheated oven at 375°F (190°C) for about 30 minutes, or until the apricots are tender and the fig leaves are slightly browned.
  • Serve the apricots: Let the apricots cool slightly before unwrapping them. Serve them warm or at room temperature with a dollop of yogurt or a scoop of ice cream.

Conclusion:

Apricots baked in fig leaves are a delicious and elegant dessert that is perfect for any occasion. The combination of sweet apricots, aromatic fig leaves, and warm spices creates a truly unique and memorable flavor experience. This recipe is also relatively easy to make, making it a great option for home cooks of all skill levels.
