2 cups sugar
2 tablespoons water
1 1/4 cups heavy cream
1 tablespoon unsalted butter
1/4 cup maple syrup
2 tablespoons dark rum
2 1/4 cups cake flour
1/2 teaspoon baking soda
1 teaspoon salt
2 cups cold water
Peanut oil for frying
8 apricots, mangoes or peaches, or 1 pineapple
Confectioners' sugar
Coconut ice cream or sherbet
Mint for garnish

Steps:

  • To make the sauce, caramelize the sugar by combining it with the water and stirring it carefully over a medium-high flame until the sugar starts melting. Whisk in three-quarters of a cup of the heavy cream and the butter. Add the maple syrup, the rum and the rest of the cream.

All-purpose flour, for surface
1 3/4 pounds apricots, cut into 3/4-inch-thick wedges (6 cups)
1/2 cup granulated sugar
1/2 cup packed light-brown sugar
1 tablespoon plus 2 teaspoons cornstarch

Steps:

  • Preheat oven to 375 degrees. Make the topping: Whisk together flour and 1/8 teaspoon salt. Pulse coconut in a food processor until finely ground. Add butter and brown sugar, and pulse to combine. Add flour mixture, and pulse until clumps form.

1/2 cup hot water
1/2 cup heavy cream
2 tablespoons unsalted butter
1 cup sweetened flaked coconut, toasted and cooled
2 tablespoons dark rum, or to taste, if desired

Steps:

  • In a dry large deep heavy skillet cook the sugar over moderately high heat, stirring constantly with a fork, until it is melted and turns a deep golden caramel, remove the skillet from the heat, and into the side of it pour carefully the water and the cream, a little at a time.
  • Cook the mixture over moderate heat, stirring, until the caramel is dissolved and simmer it for 2 minutes. Remove the skillet from the heat, add the butter and the coconut, and stir the mixture until the butter is melted. Pour the sauce into a heatproof pitcher or glass measure, let it cool slightly, and stir in the rum. (The sauce will thicken as it cools. To return the sauce to liquid state, set the pitcher in a saucepan of barely simmering water and stir the sauce until it reaches the desired consistency.) Serve the sauce warm over ice cream.

1 pound apricots
3 whole eggs
3 yolks
1/2 cup sugar
2 cups heavy cream
1 1/2 cups milk
1 teaspoon vanilla extract
10 coriander seeds, crushed coarsely and tied in cheesecloth

Steps:

  • Wash and pit the apricots, chop them coarsely and simmer in three tablespoons of water until tender. Puree in a food processor and set aside.
  • Beat together the eggs, yolks and sugar until the sugar has dissolved and the mixture is pale and lemon colored. (This can easily be done in a food processor.)
  • Meanwhile, heat the cream and milk with the vanilla and coriander seeds. Remove from heat just before mixture reaches the boiling point.
  • Pour mixture in a thin stream into the eggs and mix thoroughly. Pour into a double boiler and put over very hot water on a medium flame. (You can also use a thick saucepan placed on an iron trivet over a low flame.) Cook until thickened to the consistency of custard.
