APRICOT LOAF

Time 1h5m

Yield 1 loaf

Number Of Ingredients 9

1 cup chopped apricot
1/2 cup currants
1/2 cup sultana
1/2 cup sugar
1/4 lb butter, softened
2 cups self raising flour
2 large eggs, beaten
chopped preserved gingerroot (optional)
chopped pecans or walnuts (optional)

Steps:

  • Grease a 7'x3'x2' loaf tin.
  • Pour a (250ml) cup of boiling water over fruit, sugar and butter.
  • Add the eggs and flour.
  • Pour into the loaf tin and bake in a moderate oven for about 45 minutes.

Tips:

- Use fresh or dried apricots for the best flavor. If using dried apricots, soak them in hot water for 10 minutes before using. - Be sure to drain the apricots well before adding them to the batter. Excess moisture can make the loaf too dense. - Add a streusel topping for a crunchy texture. To make a streusel topping, combine 1/2 cup flour, 1/2 cup brown sugar, and 1/2 cup chopped nuts (such as pecans or walnuts) in a small bowl. Mix until the mixture resembles coarse crumbs. Sprinkle the streusel topping over the batter before baking. - For a sweeter loaf, add 1/2 cup of granulated sugar to the batter. - For a more tart loaf, use lemon juice instead of orange juice. - Serve warm or at room temperature with a dollop of whipped cream or a scoop of vanilla ice cream.

Conclusion:

Apricot tea loaf is a delicious and easy-to-make treat that is perfect for any occasion. With its moist texture, sweet apricot flavor, and crunchy streusel topping, this loaf is sure to be a hit with everyone who tries it. So next time you're looking for a special treat to bake, give apricot tea loaf a try. You won't be disappointed!
