3 ounces cream cheese, softened
2 tablespoons apricot preserves
2-1/2 teaspoons minced chives
Dash onion powder
Assorted crackers

Steps:

  • In a small bowl, beat the cream cheese, preserves, chives and onion powder until smooth. Transfer to a serving bowl. Cover and refrigerate for 25 minutes or until chilled. Serve with crackers.

Yield Makes about 1 1/3 cups

Number Of Ingredients 6

1/2 pound dried apricots, preferably California (1 1/2 cups)
3/4 cup dry white wine
1/2 cup water
1/4 cup sugar
2 (3-inch) strips lemon zest
1 1/2 teaspoons dark rum

Steps:

  • Bring apricots, wine, water, sugar, zest, and a pinch of salt to a boil in a small heavy saucepan over medium-high heat, stirring until sugar has dissolved. Reduce heat and simmer, partially covered, stirring occasionally, until liquid is reduced and very syrupy and apricots are very soft, about 15 minutes if using California (about 45 minutes if using Turkish). (If apricots are not yet softened, pour in an additional 1/4 cup water and continue cooking.)
  • Remove from heat. Discard zest, then stir in rum. Transfer apricot mixture to a bowl and cool slightly, stirring occasionally, about 45 minutes.
  • Purée in a food processor until mixture is very smooth. Add water to purée if necessary to achieve a spreadable consistency.
  • Serve at room temperature or chilled.

Steps:

  • Soak apricots in water overnight; drain; reserving 2 tablespoons liquid. , In a blender, combine apricots and reserved liquid ; process for about 10 seconds. Add cream cheese; process just until blended, about 10-20 seconds. Add walnuts and blend until mixed. Store in the refrigerator.

1 1/2 lbs skinless boneless, chicken thighs
3/8 teaspoon ground red pepper
1/2 teaspoon ground black pepper
1/8 teaspoon salt
3 apricots, halved and pitted
1 tablespoon water
1 tablespoon cider vinegar
1 tablespoon Dijon mustard
2 garlic cloves, chopped
8 mini sandwich buns

Steps:

  • Combine first 3 ingredients in a small bowl.
  • Sprinkle chicken with pepper mixture.
  • Place a large grill pan over medium high heat, and coat with cooking spray.
  • Add chicken to pan, cook 5 minutes on each side or until done.
  • Cool slightly, and shred meat.
  • Recoat pan with cooking spray, and place apricots cut side down on pan, and cook 6 minutes on medium-high heat or until tender and lightly browned, turning after 4 minutes.
  • Place apricots and add water, cider vinegar, mustard, and garlic cloves in a food processor, and process until smooth.
  • Spread 1/2 teaspoon apricot chutney over cut side of each sandwich bun half.
  • Place 1/3 cup chicken on bottom bun, and cover with other half of bun.

1 (8 ounce) can crushed pineapple, in juice, undrained
1/2 cup dried apricot, finely chopped
1/4 cup mango chutney, chopped
1/4 cup apricot brandy
1/2 teaspoon ground ginger
2 cups reduced-fat cheddar cheese, shredded
2 (8 ounce) packages fat free cream cheese, softened
1/4 cup reduced-calorie stick margarine, softened

Steps:

  • In a sieve over a bowl, drain the pineapple, reserving 3 tablespoons of the juice.
