1/2 cup water
1/3 cup dried apricots, chopped
1 1/4 lb firm-ripe apricots (7 large)
2 tablespoons fresh lemon juice
1/8 teaspoon almond extract
Special Equipment
an ice cream maker

Steps:

  • Preheat oven to 350°F.

  • Purée dried apricot mixture, roasted apricots, lemon juice, and almond extract in a blender until very smooth, 1 1/2 to 2 minutes. Force purée through a fine sieve into a bowl, pressing hard on solids and then discarding them. Chill purée, covered, until cold, at least 2 hours.

Categories     Ice Cream Machine     Dessert     Freeze/Chill     Apricot     Summer     Vegan     Fat Free     Kidney Friendly     Vegetarian     Pescatarian     Dairy Free     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Makes about 6 servings

Number Of Ingredients 4

1 cup water
1/2 cup sugar
1 pound apricots, pitted
1 tablespoon freshly squeezed lemon juice

Steps:

  • Place the water and the sugar in a small saucepan over medium-high heat and bring to a boil, stirring all the while. When the sugar has dissolved, add the apricots, return to the boil, and reduce the heat so the liquid is simmering gently. Simmer the apricots just until they begin to turn tender, about 5 minutes. Remove from the heat and cool completely.
  • Puree the apricots and their poaching liquid in a food processor until smooth. Strain the mixture if you like, though it isn't necessary. Chill the mixture in an airtight container in the refrigerator for at least one hour and up to 24 hours.
  • Just before freezing, whisk in the lemon juice. Freeze according to the ice cream freezer manufacturer's instructions.

Tips:

  • Use ripe apricots: The riper the apricots, the sweeter and more flavorful your sorbet will be.
  • Freeze the apricots before making the sorbet: This will help to create a smoother, creamier texture.
  • Use a high-powered blender or food processor: This will help to break down the apricots and create a smooth sorbet.
  • Add sugar or honey to taste: The amount of sugar or honey you add will depend on your desired sweetness level.
  • Serve the sorbet immediately or freeze it for later: If you're serving the sorbet immediately, top it with sparkling water or ginger ale. If you're freezing it for later, store it in an airtight container for up to 2 weeks.

Conclusion:

Apricot sorbet is a delicious and refreshing treat that is perfect for summer. It is easy to make and can be customized to your liking. Whether you like it sweet or tart, with or without sparkling water, apricot sorbet is a surefire hit. So next time you have a craving for something sweet and cold, give this recipe a try.
