3 lbs pork loin roast
1 teaspoon salt
1/4 teaspoon pepper
1 cup apricot preserves
1/4 cup cooking sherry or 1/4 cup apple juice
2 teaspoons dried rosemary leaves, crumbled
2 garlic cloves, finely chopped

Steps:

  • Preheat oven to 350°F.
  • Remove any excess fat from the roast.
  • Place roast in a 13x9-inch baking dish that has been sprayed with non-stick cooking spray.
  • Sprinkle with salt and pepper.
  • In a small saucepan, heat the preserves, sherry, rosemary and garlic over medium heat, stirring frequently.
  • When thickened, spoon 1/4 cup mixture onto pork reserving remainder.
  • Insert meat thermometer so tip is in center of thickest part of pork.
  • Bake uncovered 1 hour 15 minutes to 1 hour 30 minutes or until the thermometer reads 155°F.
  • Cover pork with foil and allow to stand 15 to 20 minutes or until thermometer reads 160°F.
  • Cut roast into slices.

1 bone-in pork loin roast (4 to 5 pounds)
1/2 teaspoon salt
1/2 teaspoon pepper
2/3 cup packed brown sugar
2 tablespoons cornstarch
1-1/4 teaspoons ground mustard
2 cups apricot nectar
4 teaspoons cider vinegar

Steps:

  • Sprinkle roast with salt and pepper. Place on a rack in a shallow roasting pan. Bake, uncovered, at 350° for 1 hour. , In a large saucepan, combine the brown sugar, cornstarch and mustard. Stir in apricot nectar and vinegar until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. , Spoon 1/2 cup glaze over roast.   • Heat oven to 350°F. Trim fat from pork. Place pork in 13x9-inch glass baking dish. Sprinkle with salt and pepper.

1 dash salt
1 dash fresh ground black pepper
7 ounces unseasoned stuffing cubes
1/4 cup butter
1 cup diced celery
1/2 cup diced yellow onion
1/2 cup diced dried apricots or 1/2 cup dried cherries
2 cups chicken broth or 2 cups water
1/2 cup apricot preserves
1 tablespoon country-style dijon mustard
3 tablespoons chopped fresh rosemary or 1 tablespoon dried rosemary
3 cloves garlic, peeled and finely minced

1/2 cup chopped dried dates
1/2 cup pecans
1 clove garlic
3/4 teaspoon salt (divided use)
1/4 teaspoon fresh ground pepper
4 tablespoons freshly chopped thyme (divided use)
4 tablespoons molasses (divided use)
4 tablespoons peanut oil or 4 tablespoons vegetable oil (divided use)
5 lbs boneless pork loin roast, halved
1 cup Bourbon
1 cup chicken broth
1/4 cup heavy whipping cream

Steps:

  • Preheat oven to 350 degrees F.
  • Coarsely chop apricots, dates, pecans, garlic, 1/2 teaspoon salt and pepper in a food processor.

2 c onions - chopped

1 & 1/2 tsp pumpkin pie spice
5 oz fresh baby spinach
1 c chopped walnuts
1 c chicken stock
16 oz apricot preserves

  • 1. Sauté onions with olive oil in large frying pan until golden, almost carmelized.
  • 2. Add chopped apricots and garlic and continue sauté
  • 3. add pumpkin pie spice and blend in.
  • 4. Add spinach and sauté until wilted.
