1-1/2 cups finely chopped onions
1-1/2 cups finely chopped celery
4 teaspoons canola oil
5 cups cooked wild rice
3/4 pound dried apricots, coarsely chopped
1-1/3 cups reduced-sodium chicken broth
1/2 cup coarsely chopped pecans, toasted
1/2 cup minced fresh parsley
2 teaspoons dried thyme
1 teaspoon rubbed sage
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a nonstick skillet, saute onions and celery in oil for 5 minutes or until tender. Transfer to a large bowl. 1 cup wild rice
2 onions
1 rib celery
8 tablespoons butter
1 cup white rice
1 teaspoon dried rosemary
Salt and pepper
1/2 teaspoon nutmeg
2 cups chicken stock
1 cup dried apricots
1 cup pecan halves

Steps:

  • Cook wild rice in plenty of boiling salted water until tender and drain. Chop onions and celery. Heat 8 Tbs, of the butter in saucepan over medium heat. Add onions and celery and cook until soft, about 5 minutes. Add white rice and rosemary and stir 1 minute. Add 1 tsp. salt and 1/2 tsp. pepper, the nutmeg and stock. Bring to a boil, reduce heat, cover, and simmer until rice is tender and liquid has been absorbed, about 20 minutes. Chop apricots and stir in along with wild rice and pecans. Heat oven to 325 F. Add 1/2 cup of chicken broth to the stuffing and bake for 30 min.
