1 cup sugar
1 to 2 teaspoons grated orange zest
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda

1 cup fresh or frozen halved cranberries
1/4 cup apricot preserves

2 large eggs
2/3 cup orange juice
2/3 cup milk
2/3 cup finely chopped apricots

3 cups cranberries, picked over and chopped in a food processor

2 cups water
2 tablespoons margarine
1 cup sugar
1 egg, slightly beaten
2 tablespoons freshly grated orange peel
3 1/2 cups flour
1/2 cup nonfat dry milk powder
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup orange juice
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350º F. Lightly oil two 9x5-inch loaf pan.
