Tips:

  • Selecting the right pork roast: Choose a pork shoulder roast or pork loin roast for this recipe. Pork shoulder is a flavorful and budget-friendly cut, while pork loin is a leaner and more tender option.
  • Scoring the pork roast: Scoring the pork roast helps the marinade and glaze penetrate the meat more deeply, resulting in a more flavorful roast.
  • Marinating the pork roast: Marinating the pork roast for at least 4 hours, or overnight, allows the flavors of the marinade to infuse the meat.
  • Preparing the apricot mustard glaze: The apricot mustard glaze is what gives this pork roast its signature flavor. Be sure to use a good quality apricot preserves or jam, and a tangy mustard.
  • Roasting the pork roast: Roast the pork roast in a preheated oven until it reaches an internal temperature of 145°F (63°C) for medium-rare, 155°F (68°C) for medium, or 165°F (74°C) for well done.
  • Basting the pork roast: Baste the pork roast with the apricot mustard glaze every 20-30 minutes while it is roasting. This will help keep the roast moist and flavorful.
