Salt and pepper
3/4 cup apricot jam
1 tablespoon grainy mustard
1/4 cup water
Leaves from 2 sprigs fresh thyme

Steps:

  • Preheat the oven to 400°F.
  • Place the chicken on a rimmed cookie sheet or baking dish lined with foil or parchment paper, sprinkle with salt and pepper, and bake for 10 minutes.
  • While the chicken is baking, whisk together the jam, mustard, water, thyme, and a little salt and pepper in a small saucepan over low heat for about 3 minutes. It should be slightly syrupy.

I got this from "Your Family Will Love It!", put out by Prevention magazine some time in the mid-1990s. It's my go-to recipe when my oven isn't free (and we don't have access to a grill). Couldn't be easier, and I always have the ingredients in the house. One 4-ounce portion is 4 WW points.

1/4 cup Dijon mustard (I use a homemade Dijon that is VERY spicy)
3 tablespoons apricot preserves
1 tablespoon soy sauce (reduced-sodium)
1 tablespoon scallion, finely chopped
2/3 cup water

  • In a large no-stick skillet, combine the water, mustard, preserves, soy sauce, and scallions. Mix thoroughly.
